Cranberry Orange Baked Oatmeal

Cranberry orange baked oatmeal is studded with tart jammy cranberries, fresh orange juice and zest, and a sweet orange glaze to top it off.

Ingredients

Wet Ingredients

  • 1 3/4 cup milk of choice
  • 1 egg
  • 1/4 cup maple syrup
  • 1 teaspoon orange zest
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract
  • 1 scoop vanilla protein powder, about 1/4 cup (optional)

Dry Ingredients

  • 2 1/4 cups old fashioned rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup fresh or frozen cranberries

Orange Glaze

  • 1/2 cup powdered sugar
  • 1/2 teaspoon orange zest
  • 2 tablespoons orange juice
  • Pinch of salt

Instructions

  • Preheat oven to 350° F. Spray an 8x8 or similar sized baking dish with cooking spray.
  • In a mixing bowl, whisk together all of the wet ingredients, including the protein powder if you are using it.
  • In a separate mixing bowl, whisk together all of the dry ingredients except the cranberries.
  • Pour the wet ingredients in with the dry and stir together until combined. Stir in the cranberries. Pour the mixture into the prepared baking dish. Bake for 40-45 minutes or until the oatmeal is set and the edges are golden brown.
  • Let the oatmeal cool for 10 minutes while you make the glaze. Whisk together all of the ingredients for the orange glaze in a small bowl. Drizzle it on top of the baked oatmeal or serve it on the side.

Notes

  • If you are using frozen cranberries, don't defrost them. Add them into the oatmeal mixture frozen.
  • Nutritional info doesn't include the protein powder.
