Cranberry Orange Baked Oatmeal
Cranberry orange baked oatmeal is studded with tart jammy cranberries, fresh orange juice and zest, and a sweet orange glaze to top it off.

Wet Ingredients
- 1 3/4 cup milk of choice
- 1 egg
- 1/4 cup maple syrup
- 1 teaspoon orange zest
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
- 1 scoop vanilla protein powder, about 1/4 cup (optional)
Dry Ingredients
- 2 1/4 cups old fashioned rolled oats
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup fresh or frozen cranberries
Orange Glaze
- 1/2 cup powdered sugar
- 1/2 teaspoon orange zest
- 2 tablespoons orange juice
- Pinch of salt
Preheat oven to 350° F. Spray an 8x8 or similar sized baking dish with cooking spray.
In a mixing bowl, whisk together all of the wet ingredients, including the protein powder if you are using it.
In a separate mixing bowl, whisk together all of the dry ingredients except the cranberries.
Pour the wet ingredients in with the dry and stir together until combined. Stir in the cranberries. Pour the mixture into the prepared baking dish. Bake for 40-45 minutes or until the oatmeal is set and the edges are golden brown.
Let the oatmeal cool for 10 minutes while you make the glaze. Whisk together all of the ingredients for the orange glaze in a small bowl. Drizzle it on top of the baked oatmeal or serve it on the side.
- If you are using frozen cranberries, don't defrost them. Add them into the oatmeal mixture frozen.
- Nutritional info doesn't include the protein powder.
