Meal prep – Baked oatmeal is perfect if you meal prep! It keeps for up to 5 days in the refrigerator or you can freeze it. It’s perfect to have on hand for a quick breakfast or snack.
Ingredients for Baked Oatmeal
- Milk – Any type of milk works

How to Make Cranberry Orange Baked Oatmeal

Whisk the dry ingredients together in one mixing bowl and the wet ingredients together in a separate bowl. Pour the wet ingredients in with the dry and stir together.
Stir in the cranberries and then pour the mixture into an 8×8 or similar sized baking dish that’s been sprayed with cooking oil.
Bake for 40-45 minutes or until the oatmeal is set and the edges are golden brown. Remove it from the oven and let it cool for 10 minutes.
While the oatmeal is cooling whisk together all of the ingredients for the glaze. Drizzle the glaze on top of the oatmeal.
Substitutions and Variations
- If you can’t find fresh or frozen cranberries, use a 1/2 cup of dried cranberries.
- For additional protein, add 1 scoop vanilla protein powder. Approximately 1/4 cup.
- Make individual baked oatmeal cups. Divide the oatmeal mixture into a standard size muffin pan sprayed with oil. Parchment paper liners or silicone muffin cups be used as well. Check the oatmeal cups at 20 minutes to see if they are set and golden brown.
- If you choose to skip making the glaze, you may want to add an additional tablespoon of maple syrup to the baked oatmeal.
Can I Use Quick Oats to Make Baked Oatmeal?
No. For this baked oats recipe they won’t work. There are baked oatmeal recipes out there that call for quick oats, but the ingredients and cooking time will be different.
Can I Make Baked Oatmeal Ahead of Time?
Yes. Make the oatmeal and bake it the night before you plan to serve it. Refrigerate it overnight, then cover it with foil and reheat it in a 350° F. oven for 10-15 minutes or until warm.
You can also prep the dry and wet ingredients the night before and store them separately. Combine them in the morning and bake according to the instructions in the recipe card.
Storage, Freezing, and Reheating
Storage – This baked oatmeal will keep in the fridge for up to 5 days in an airtight container.
Freezing – Baked oatmeal is freezer-friendly. Cool completely and then freeze in an airtight container for up to 3 months. If you plan to freeze this baked oatmeal, freeze it without the glaze on top.
Reheating – Reheat the oatmeal in the microwave or If you’re reheating the entire dish, I suggest reheating it in the oven. Cover with foil and bake at 350° F. for 10-15 minutes or until it’s warm.

Wet Ingredients
- 1 3/4 cup milk of choice
- 1 egg
- 1/4 cup maple syrup
- 1 teaspoon orange zest
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
- 1 scoop vanilla protein powder, about 1/4 cup (optional)
Dry Ingredients
- 2 1/4 cups old fashioned rolled oats
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup fresh or frozen cranberries
Orange Glaze
- 1/2 cup powdered sugar
- 1/2 teaspoon orange zest
- 2 tablespoons orange juice
- Pinch of salt
Instructions
- Preheat oven to 350° F. Spray an 8×8 or similar sized baking dish with cooking spray.
- In a mixing bowl, whisk together all of the wet ingredients, including the protein powder if you are using it.
- In a separate mixing bowl, whisk together all of the dry ingredients except the cranberries.
- Pour the wet ingredients in with the dry and stir together until combined. Stir in the cranberries. Pour the mixture into the prepared baking dish. Bake for 40-45 minutes or until the oatmeal is set and the edges are golden brown.
- Let the oatmeal cool for 10 minutes while you make the glaze. Whisk together all of the ingredients for the orange glaze in a small bowl. Drizzle it on top of the baked oatmeal or serve it on the side.
Notes
- If you are using frozen cranberries, don’t defrost them. Add them into the oatmeal mixture frozen.
