This cucumber dill feta salad is made with crisp cucumbers, fresh dill, salty feta and crunchy pistachios. You'll be making this easy salad all summer long!
1/4teaspoonfreshly ground black pepper or to taste
Instructions
Combine the apple cider vinegar and salt in a small saucepan. Bring it to a simmer over medium heat.
Once simmering, add in the shallots. Remove the pan from the heat and let the shallots steep and cool in the vinegar for about 15 minutes. Whisk in the olive oil.
Combine the cucumbers, dill, feta and pistachios in a serving bowl.
Pour the vinegar mixture over the top of the salad and toss everything together. Season with freshly ground black pepper and additional salt if needed.
Notes
If you don't plan to serve the salad immediately, leave out the pistachios and add them in when you're ready to serve.
