Time for a Colorado weather update, because it’s spring and you never know what the heck is going to happen. Up until now spring has been pretty enjoyable. Mostly warm and sunny days, I’ve been wearing shorts a lot, I really can’t complain…until now.

Monday was our last 70 degree, sunny day for about a week. The temperatures going down into the 50’s is bad enough, along with the chance of rain the next 4 out of 7 days, but it’s the freaking snow predicted for Saturday that has my panties in a knot!

When the snow comes this late in the season it’s such a bummer. I’m ready to start my vegetable garden, grill, eat dinner on our deck and spend the weekends outside, not turn on the fireplace and put my winter coat on when I go outside. The only shoveling I want to be doing this close to May is turning the dirt in my garden, not removing the snow from the driveway. I’m hoping the weather where you live is much nicer this weekend, if not feel free to vent and leave me a comment.

So while I’m glaring outside at the snow this weekend, I’ll think back a couple weekends to the warm weather, the grilling and this simple, but amazing Cucumber, Dill, Feta and Pistachio Salad that I made.

The salad was inspired by one that I saw in my Cooking Light magazine, but quickly turned into a Danae original once I realized I’d have to go to the grocery store if I made it the way the magazine instructed. Luckily, my version turned out so good that I had to share it with you guys.

Cucumber Dill Feta Salad

This cucumber dill feta salad is made with crisp cucumbers, fresh dill, salty feta and crunchy pistachios. You'll be making this easy salad all summer long!

Ingredients 

  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 2 tablespoons finely chopped shallot or red onion
  • 1 tablespoon olive oil
  • 2 English cucumbers sliced thin
  • 2 tablespoons chopped fresh dill
  • 2 ounces feta cheese crumbled
  • 1/4 cup unsalted shelled pistachios roughly chopped
  • 1/4 teaspoon freshly ground black pepper or to taste

Instructions 

  • Combine the apple cider vinegar and salt in a small saucepan. Bring it to a simmer over medium heat.
  • Once simmering, add in the shallots. Remove the pan from the heat and let the shallots steep and cool in the vinegar for about 15 minutes. Whisk in the olive oil.
  • Combine the cucumbers, dill, feta and pistachios in a serving bowl.
  • Pour the vinegar mixture over the top of the salad and toss everything together. Season with freshly ground black pepper and additional salt if needed.

Notes

If you don’t plan to serve the salad immediately, leave out the pistachios and add them in when you’re ready to serve.

Amazing flavor blending and I was asked by seven neighbors to make this the next time we have our neighborhood BBQ and more than double(triple and then some) it (the kids scooped it up before most of the adults could get to it…lesson learned)…Thank you, thank you, and so looking forward to seeing more recipes and running!!
