Salad
- 1 English cucumber, seeds scooped out and sliced (about 2 cups)
- 2 cups cherry tomatoes, halved
- 1/2 cup thinly sliced red onion
- 1/4 cup chopped parsley
- 1 tablespoon chopped dill
Vinaigrette
- 3 tablespoons red wine vinegar
- 1 1/2 tablespoons olive oil
- 1 tablespoon dijon mustard
- 1/2 teaspoon garlic powder
- 3/4 teaspoon dried oregano
- Kosher salt and fresh ground black pepper to taste
In a large serving bowl combine the cucumber, tomatoes, red onion and herbs.
In a small bowl or jar whisk together the vinaigrette ingredients. Pour over the salad and stir until coated. Taste for seasoning and serve or cover and refrigerate until ready to serve.
