Cucumber Tomato Salad

This quick and easy to make Cucumber Tomato Salad is perfect for summer! Crunchy cucumbers and sweet tomatoes are tossed together in a red wine vinaigrette.

Ingredients

Salad

  • 1 English cucumber, seeds scooped out and sliced (about 2 cups)
  • 2 cups cherry tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped parsley
  • 1 tablespoon chopped dill

Vinaigrette

  • 3 tablespoons red wine vinegar
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon dried oregano
  • Kosher salt and fresh ground black pepper to taste

Instructions

  • In a large serving bowl combine the cucumber, tomatoes, red onion and herbs.
  • In a small bowl or jar whisk together the vinaigrette ingredients. Pour over the salad and stir until coated. Taste for seasoning and serve or cover and refrigerate until ready to serve.
