Greek Chicken Bites

These easy to make and versatile Greek chicken bites are great for adding to salads, wraps, rice bowls, or serve them as an appetizer with tzatziki sauce!

Ingredients

  • 1 1/2 pounds chicken breasts cut into 1" pieces
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • Salt and freshly ground black pepper to taste I recommend using 1-1 1/2 teaspoons kosher salt
  • 2 1/2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh dill

Instructions

  • Cut the chicken into approximately 1 inch pieces and place them in a mixing bowl. Combine the dried spices and pour them on top of the chicken. Drizzle in a tablespoon of olive oil and toss together until the chicken is coated in the spices and oil.
  • Heat another 1-2 tablespoons of olive oil in a 12" skillet over medium-high heat. When the oil is hot swirl to coat the bottom of the skillet and then dump in the chicken. Spread it out into single layer and let it cook untouched for 3-4 minutes.
  • Once a golden brown crust has formed on the bottom of the chicken bites, flip them over and continue to cook until they're cooked through, 165° F.
  • Turn off the heat and squeeze lemon juice all over the chicken. Sprinkle on the chopped dill and serve.
