The ingredients
- Chicken breasts – Boneless skinless chicken breasts work best, however you could use boneless skinless chicken thighs if possible.
- Dried oregano, garlic, cumin, coriander, cinnamon – The Greek spice blend for the chicken.
- Lemon – Fresh squeezed lemon juice is a must for this recipe.
- Dill – Finishing the chicken bites with dill is a great way to add a fresh, bright flavor to them.
- Olive oil – Olive oil or avocado can be used to cook the chicken. It’s what gives the chicken that crisp, golden brown crust.
How to make Greek chicken bites
This is an overview of the recipe with step-by-step photos. Full ingredients & instructions can be found in the recipe card below.
Add the pieces of chicken to a bowl along with all of the dried spices, salt and pepper, and a tablespoon of olive oil. Toss everything together until all of the chicken is coated in the spices.
Heat a 12 inch skillet over medium-high heat with the remaining oil. When the skillet is hot add in the chicken. Spread it out into a single layer and cook for several minutes before flipping it.
Once the chicken is cooked through, turn off the heat and squeeze the lemon juice all over the chicken and sprinkle on the dill. Serve immediately.
What to serve with Greek chicken
As mentioned above, Greek chicken bites can be served on top of salads, in wraps, with dipping sauces, or added to rice bowls. Below are some side dishes and salads they would pair well with.
Greek Chicken Bites Tips
- Cut the chicken into 1 inch pieces. By keeping the chicken bites small and similar in size they will cook evenly and fast.
- Don’t crowd the chicken in the skillet. If the chicken is too crowded and isn’t in a single layer, you won’t get that golden brown crust.
- Let the chicken cook for 3-4 minutes without moving it. If you try to flip it too soon you won’t get a golden brown crust or you may rip it off in the process of flipping it.
- Season the chicken well with salt. I use approximately 3/4 teaspoon per pound of chicken. This kosher salt is my favorite salt to use for cooking and baking.
- If you don’t want to use fresh dill, substitute with an equal amount of chopped flat leaf parsley.
Storing leftovers
Refrigerator – Chicken bites will keep in an airtight container in the refrigerator for up to 4 days.
Freezer – Once the chicken bites have cooled completely you can freeze them for up to 3 months.
Reheating – To reheat the chicken bites you can microwave them or reheat them in a skillet over medium-low heat until warmed through.

- Once a golden brown crust has formed on the bottom of the chicken bites, flip them over and continue to cook until they're cooked through, 165° F.
- Turn off the heat and squeeze lemon juice all over the chicken. Sprinkle on the chopped dill and serve.
