Greek Pita Pizzas

Mini pitas topped with hummus, a simple Greek salad and feta cheese are perfect when you're craving a fresh pizza full of Mediterranean flavors.

Ingredients

  • 6 mini pitas
  • 6 tablespoons hummus
  • 1 cup diced English cucumber
  • 1 cup cherry tomatoes, diced
  • 1/4 cup diced red onion
  • 1/4 cup kalamata olives
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Kosher salt and fresh ground black pepper to taste
  • 1/4 cup crumbled feta cheese

Instructions

  • Brush the tops of the pita bread with olive oil and sprinkle with salt, oregano and garlic powder. Broil in the oven until golden brown.
  • In a medium sized bowl combine the cucumber, tomatoes, onion, olives, olive oil, vinegar, oregano, salt and pepper.
  • Spread a tablespoon of hummus on top of each mini pita. Divide the Greek salad mixture evenly on top of each pita. Top the pizzas with feta cheese and serve.
