Stir Fry Sauce
- 1/2 cup low sodium chicken broth
- 1/4 cup low sodium soy sauce
- 3 tablespoons maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste, such as sambal oelek
- 2 teaspoons toasted sesame oil
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon garlic powder
- 1 tablespoon cornstarch
Stir Fry
- 1 1/2 tablespoon avocado oil, or olive oil
- 1 pound lean ground turkey
- 1 red bell pepper, diced
- 1 1/2 cups broccoli florets
- 3 green onions, sliced thin
- 1/2 cup shelled edamame
- sesame seeds for garnish
Whisk together all of the ingredients for the stir fry sauce in a measuring glass or bowl.
Add a couple teaspoons of oil to a large skillet or wok. Heat the oil over medium-high heat, then add in the ground turkey. Season with salt and pepper and then crumble and cook it. Once it's cooked through, dump it out onto a plate.
Add a couple more teaspoons of oil to the skillet, then add in the broccoli, bell pepper, and green onions. Cook for 2-3 minutes or until crisp tender.
Add the ground turkey back into the skillet along with the edamame. Pour in the stir fry sauce. Stir everything together until it's coated in the sauce. Simmer until the sauce thickens. Taste for seasoning, then remove from the heat. Garnish with sesame seeds and serve over rice or rice noodles.
