Ingredients for Stir Fry
- Chicken broth – Use low sodium.
- Soy sauce – Adds a savory, salty, umami flavor to the stir fry sauce. Use low sodium.
- Maple syrup – Gives the stir fry sauce a bit of sweetness to balance out the savory flavors.
- Rice vinegar – A mild, slightly sweeter vinegar often used in Asian cooking.
- Chili paste – Sambal oelek is a common brand. Found in the Asian ingredients section at the grocery store.
- Toasted sesame oil – Use toasted sesame oil, not just plain sesame oil for the best sesame flavor.
- Ginger – Super fresh flavor with a little spicy kick.
- Garlic powder – Grated or minced fresh garlic can also be used. I recommend 1 teaspoon fresh garlic.
- Cornstarch – Thickens the stir fry sauce.
- Ground turkey – I use 90/10% lean ground turkey. You want a little fat in the meat for flavor and it won’t dry out the way extra lean does.
- Red bell pepper, broccoli florets, green onions – Veggies can be swapped with whatever you have or like best.
- Shelled edamame – A great way to add extra protein and fiber to stir fry.
- Sesame seeds – For garnish. They add a little crunch as well.
How to Make Ground Turkey Stir Fry

Whisk together all of the ingredients for the stir fry sauce in a measuring glass or bowl.
Cook and crumble the ground turkey in a large skillet. Season it with salt and pepper and when it’s cooked through dump it out onto a plate.
Add some oil to the skillet and add in the pepper, broccoli, and green onions. Sauté until crisp tender.
Add the ground turkey back into the skillet along with the edamame and stir fry sauce. Stir everything together and simmer until the sauce thicken.
Remove the stir fry from the heat and garnish with sesame seeds. Serve over rice or rice noodles.
Substitution and Variations
- Swap ground turkey with ground chicken or ground beef.
- Use different veggies. Spinach, carrots, white onion, green beans, bok choy, green bell pepper, cauliflower, and asparagus are all great options.
- To make gluten-free stir fry, simply swap soy sauce with tamari.
- Swap maple syrup with honey to sweeten the sauce.
- Make the stir fry vegan by replacing the ground turkey with crumbled tofu.
- Add a crunchy element such as cashews or peanuts. Make sure they are unsalted so the dish doesn’t get too salty.
Ways to Serve Stir Fry
My go-to way to serve stir fry is over white or brown rice. Quinoa is another great option if you’re looking for something with a little extra protein.
If noodle are more your style, rice noodles or ramen are great options. Spaghetti noodles also work well.
If you prefer something lower in carbs, serve over cauliflower rice or use the stir fry as a filling for lettuce wraps.
Storage, Reheating, and Freezing
Storage – Stir fry will keep in an airtight container in the refrigerator for up to 4 days.
Reheating – The turkey stir fry can be reheated in the microwave or in a skillet on the stovetop over medium-low heat until warmed through.
Freezing – You can freeze this stir fry in a freezer safe container for 2-3 months. Defrost it in the refrigerator overnight before reheating. Note that the vegetables won’t be as crisp.

Ground Turkey Stir Fry
Ingredients
Stir Fry Sauce
- 1/2 cup low sodium chicken broth
- 1/4 cup low sodium soy sauce
- 3 tablespoons maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste, such as sambal oelek
- 2 teaspoons toasted sesame oil
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon garlic powder
- 1 tablespoon cornstarch
Stir Fry
- 1 1/2 tablespoon avocado oil, or olive oil
- 1 pound lean ground turkey
- 1 red bell pepper, diced
- 1 1/2 cups broccoli florets
- 3 green onions, sliced thin
- 1/2 cup shelled edamame
- sesame seeds for garnish
Instructions
- Whisk together all of the ingredients for the stir fry sauce in a measuring glass or bowl.
- Add a couple teaspoons of oil to a large skillet or wok. Heat the oil over medium-high heat, then add in the ground turkey. Season with salt and pepper and then crumble and cook it. Once it's cooked through, dump it out onto a plate.
- Add a couple more teaspoons of oil to the skillet, then add in the broccoli, bell pepper, and green onions. Cook for 2-3 minutes or until crisp tender.
- Add the ground turkey back into the skillet along with the edamame. Pour in the stir fry sauce. Stir everything together until it's coated in the sauce. Simmer until the sauce thickens. Taste for seasoning, then remove from the heat. Garnish with sesame seeds and serve over rice or rice noodles.
