Healthy No Bake Oatmeal Raisin Cookies

- 2 tablespoons melted coconut oil
- 1/3 cup maple syrup
- 1/4 cup mashed banana, about 1/2 of a banana
- 1/4 cup unsweetened almond milk, or milk of choice
- 1/4 cup almond butter, drippy/runny almond butter works best
- 1 teaspoon vanilla extract
- 2 cups old fashioned rolled oats
- 1/3 cup raisins
- 2 tablespoons chopped pecans
- 1 1/4 teaspoons ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon kosher salt
In a medium sized saucepan over medium heat whisk together the melted coconut oil, maple syrup, mashed banana, almond milk, and almond butter until smooth.
Bring the mixture to a boil then immediately remove from the heat. Whisk in the vanilla extract. Add in the remaining ingredients and fold together with a rubber spatula until everything comes together.
Line a baking sheet with parchment paper or wax paper and use a small ice cream scoop (about 1 1/2 tablespoon size) to scoop out the cookie dough.
Place the cookies in the freezer or refrigerator to set up for 15-20 minutes before eating. Store the cookies in an airtight container in the freezer or refrigerator.
