Ingredients

  • 2 tablespoons olive oil or avocado oil
  • 1 tablespoon cornstarch
  • 1 1/2 pounds boneless skinless chicken breasts cut into bite sized pieces
  • 3 cloves of garlic grated or minced (about 1 teaspoon)

Honey Garlic Sauce

  • 1/3 cup low sodium chicken broth
  • 3 tablespoon low sodium soy sauce
  • 3 tablespoons honey
  • 2 teaspoons chili paste such as sambal oelek
  • 1 tablespoon cornstarch
  • Sliced scallions and sesame seeds for garnish optional, but recommended

Instructions

  • Combine all of the ingredients for the honey garlic sauce in a measuring glass or bowl and whisk them together.
  • Season the chunks of chicken with salt and pepper and toss them in a tablespoon of cornstarch until they're coated.
  • Add the oil to large skillet and heat it over medium-high heat. When the oil is hot, add in the chicken. Spread it into a single layer and let it cook untouched for 3-4 minutes.
  • Flip the chicken and continue to cook it until it's golden brown and cooked through. Stir in the garlic during the last minute of cooking.
  • Pour the honey garlic sauce in with the chicken and continuously stir until the sauce thickens and coats all of the pieces of chicken, about 2-3 minutes. Garnish with sliced scallions and sesame seeds and serve over rice.
