Lemon Blueberry Baked Oatmeal

- 1 3/4 cup milk of choice
- 1 egg
- 1/4 cup maple syrup
- 1 teaspoon lemon zest
- Juice of a lemon (approximately 1/4 cup)
- 1 teaspoon vanilla extract
- 1 scoop vanilla or unflavored protein powder optional
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 2 cups rolled oats
- 1 1/2 cups blueberries
Preheat oven to 350° F. and spray a 8x8 or similar size baking dish with cooking oil.
In a large bowl whisk together the egg, milk, maple syrup, vanilla, lemon zest and lemon juice.
Whisk in the salt, baking powder, and protein power.
Stir in the oats and blueberries until combined. Pour the mixture into the prepared baking dish and bake for 40-45 minutes or until set and pulling away from the edges of the dish. Let it cool for at least 10-15 minutes before serving. Top with lemon Greek yogurt if desired.
