Lemon Blueberry Baked Oatmeal

Baked oats are studded with sweet blueberries and fresh lemon. It's perfect for a healthy breakfast or a snack!

Ingredients

  • 1 3/4 cup milk of choice
  • 1 egg
  • 1/4 cup maple syrup
  • 1 teaspoon lemon zest
  • Juice of a lemon (approximately 1/4 cup)
  • 1 teaspoon vanilla extract
  • 1 scoop vanilla or unflavored protein powder optional
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups rolled oats
  • 1 1/2 cups blueberries

Instructions

  • Preheat oven to 350° F. and spray a 8x8 or similar size baking dish with cooking oil.
  • In a large bowl whisk together the egg, milk, maple syrup, vanilla, lemon zest and lemon juice.
  • Whisk in the salt, baking powder, and protein power.
  • Stir in the oats and blueberries until combined. Pour the mixture into the prepared baking dish and bake for 40-45 minutes or until set and pulling away from the edges of the dish. Let it cool for at least 10-15 minutes before serving. Top with lemon Greek yogurt if desired.
