The ingredients

  • Oats – Rolled oats also called old fashioned rolled oats are what you’ll want to use for this recipe. Quick oats and steel cut oats won’t work for this recipe and will alter the texture and cooking time.
  • Baking powder – A leavening agent that helps the baked oatmeal rise as it bakes.
  • Salt – A little bit of salt enhances the flavor of oats.
  • Protein powder – Vanilla or unflavored whey protein powder is what was used in the recipe. It’s optional and can be omitted.
  • Milk – Either dairy or dairy-free milk can be used. I used unsweetened vanilla almond milk.
  • Vanilla – For a more intense vanilla flavor, try using vanilla bean paste.
  • Egg – Acts as a binder that gives the baked oats structure.
  • Maple syrup – The natural sweetener for the oatmeal.
  • Lemon – Use both the zest and juice of a lemon. Don’t skip the zest, it adds so much lemon flavor.
  • Blueberries – If fresh blueberries are in season use those, otherwise frozen blueberries may be used.

How to make lemon blueberry baked oatmeal

In a large bowl whisk together the milk, egg, maple syrup, vanilla, lemon zest and juice.

Whisk in the protein powder (if you’re using it), salt, and baking powder.

To the wet ingredients, stir in the oats and blueberries until combined.

Pour the mixture into an 8×8 or similar size baking dish sprayed with cooking oil. Bake at 350° F. for 40-45 minutes or until the oatmeal is set and golden brown around the edges.

Variations and substitutions

  • If blueberries aren’t available or don’t look good, substitute with an equal amount of a different berry. You can also use frozen blueberries, add them in frozen.
  • Add in a tablespoon of chia seeds or poppy seeds and turn it into lemon poppy seed baked oatmeal.
  • If you love almond flavor, add in a 1/4 teaspoon of almond extract.
  • Make baked oatmeal cups. Take the oatmeal mixture and divide it into a standard size muffin pan sprayed with oil. Parchment paper liners or silicone muffin cups make clean-up easy. Check the oatmeal cups at 20 minutes to see if they are set and golden brown.

Storage and reheating

Storage – The baked oatmeal will keep in the fridge for up to 5 days in an airtight container.

Reheating – Baked oatmeal can be reheated in the microwave or If you’re reheating the entire dish, I suggest reheating it in the oven. Cover with foil and bake at 350° F. for 10-15 minutes or until it’s warmed through.

Freezing – Baked oats are freezer-friendly. Cool completely and then freeze in an airtight container for up to 3 months.

Topping for baked oats

Baked oats with lemon and blueberries is delicious on it’s own, but if you want to add a little something to it, try adding one or more of these toppings.

  • Maple syrup or honey
  • Homemade lemon yogurt (shown in the photos). Simply mix plain Greek yogurt with a little maple syrup and a splash of fresh lemon juice.
  • Fresh blueberries or other berries.
  • Almond butter or another favorite nut butter.
  • A little bit of milk to soften the oats.

Ingredients 

  • 1 3/4 cup milk of choice
  • 1 egg
  • 1/4 cup maple syrup
  • 1 teaspoon lemon zest
  • Juice of a lemon (approximately 1/4 cup)
  • 1 teaspoon vanilla extract
  • 1 scoop vanilla or unflavored protein powder optional
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups rolled oats
  • 1 1/2 cups blueberries

Instructions 

  • Preheat oven to 350° F. and spray a 8×8 or similar size baking dish with cooking oil.
  • In a large bowl whisk together the egg, milk, maple syrup, vanilla, lemon zest and lemon juice.
  • Whisk in the salt, baking powder, and protein power.
  • Stir in the oats and blueberries until combined. Pour the mixture into the prepared baking dish and bake for 40-45 minutes or until set and pulling away from the edges of the dish. Let it cool for at least 10-15 minutes before serving. Top with lemon Greek yogurt if desired.

    Is it possible to use other berries specifically frozen berries?
    I have a combination of blueberries, strawberries and blackberries which are amazing in flavor.. . .so sweet naturally
    If so do I use them frozen or thawed?

      Hi Rosalee. You can absolutely use frozen berries. Any type will work. Add them in frozen, no need to thaw.
