Lemon Coconut Cashew Energy Bites

These Lemon Coconut Cashew Energy Bites are easy to make, only use 4 ingredients, and they're paleo, vegan and gluten-free!

Ingredients

  • 3/4 cup raw cashews
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup pitted medjool dates
  • Zest of a lemon
  • pinch of kosher salt
  • 1 tablespoon of water

Instructions

  • Add the cashews, coconut, lemon zest, salt and dates to a food processor and blend until finely ground. Add in the water a tablespoon at a time until the mixture comes together in a ball.
  • Use a 2 teaspoon cookie scoop to scoop out the dough. Roll into balls, wetting your hands slightly if the mixture starts to stick to you. Roll in extra coconut if desired.
  • Store the energy bites in an airtight container in the refrigerator or freezer.
