Lemon Coconut Cashew Energy Bites

- 3/4 cup raw cashews
- 1/2 cup unsweetened coconut flakes
- 1/2 cup pitted medjool dates
- Zest of a lemon
- pinch of kosher salt
- 1 tablespoon of water
Add the cashews, coconut, lemon zest, salt and dates to a food processor and blend until finely ground. Add in the water a tablespoon at a time until the mixture comes together in a ball.
Use a 2 teaspoon cookie scoop to scoop out the dough. Roll into balls, wetting your hands slightly if the mixture starts to stick to you. Roll in extra coconut if desired.
Store the energy bites in an airtight container in the refrigerator or freezer.
