These Lemon Coconut Cashew Energy Bites are easy to make, only use 4 ingredients, and they’re paleo, vegan and gluten-free! They’re great for a pre or post workout snack.
Time for a new energy bite you guys! I haven’t shared a new recipe for one since the peach pie version I made over the summer, so these Lemon Coconut Cashew Energy Bites were due to happen.

Between the stress of the holidays and all the sugar and garbage I was giving myself a free pass to eat, it was a wonder I made it through the month without skipping a run or getting hurt. Finally in the last couple weeks I broke down and realized I needed to change some things about the way I run and eat if I’m ever going to get my speed back and have more energy as well.
My sister has always made great training plans for me and I decided it was time to get back on one. I needed a plan that would get my mileage under control (I’d been running 80-85 miles a week) and put more quality speed workouts into my routine. Quality over quantity is my motto for the new year, now it’s just a matter of sticking to it.

Yesterday I was stuck inside running on the treadmill thanks to the snow and freezing cold temperatures, but I still managed to pull off another successful workout. In fact, having a planned workout for the treadmill actually helped the time go by faster.
I’m hopeful that decreasing my mileage and adding more structured workouts into my routine will give me back my confidence and get me back to the pace I feel good about. It’s going to be a long journey, but hey, I’ve got the whole year!

Lemon Coconut Cashew Energy Bites

Ingredients
- 3/4 cup raw cashews
- 1/2 cup unsweetened coconut flakes
- 1/2 cup pitted medjool dates
- Zest of a lemon
- pinch of kosher salt
- 1 tablespoon of water
Instructions
- Add the cashews, coconut, lemon zest, salt and dates to a food processor and blend until finely ground. Add in the water a tablespoon at a time until the mixture comes together in a ball.
- Use a 2 teaspoon cookie scoop to scoop out the dough. Roll into balls, wetting your hands slightly if the mixture starts to stick to you. Roll in extra coconut if desired.
- Store the energy bites in an airtight container in the refrigerator or freezer.
