Ingredients

  • 1 1/2 cups pecans
  • 1 egg white
  • 3 tablespoons maple syrup
  • 2 tablespoons brown sugar packed
  • 2 tablespoons bourbon
  • 1/4 teaspoon kosher salt

Instructions

  • Preheat oven to 275° F. Line a baking sheet with foil or parchment paper and spray with cooking spray.
  • In a large bowl or using a stand mixer whip the egg white until it becomes very foamy. Add in the maple syrup, brown sugar, bourbon, and salt to the egg white. Whisk everything together until well combined.
  • Add the pecans to the mixture and toss them until they are completely coated. Pour them out onto the foil lined baking sheet and spread into a single layer.
  • Bake in the oven for about an hour tossing the pecans around about every 15 minutes.
  • Let the pecans cool before eating. They will get more crunchy as they cool. Store in an airtight container once they've cooled completely.

Notes

Be sure to toss the pecans around on the baking sheet every 15 minutes so that they roast evenly. They will be very sticky at first, but will start to dry up the longer they bake.
