Oatmeal Raisin Cookie Energy Bites

These gluten-free and vegan Oatmeal Raisin Cookie Energy Bites have all the flavor that the cookies do and are made with wholesome ingredients.

Ingredients

  • 1 cup gluten-free rolled oats
  • 1/4 cup flax meal
  • 3 tablespoons vanilla protein powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 7 tablespoons almond butter
  • 3 tablespoons maple syrup
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins

Instructions

  • In a medium sized bowl stir together all of the dry ingredients.
  • In a small microwave safe bowl heat the almond butter, maple syrup and water for about 15 seconds or until just warm. Remove from the microwave, add in the vanilla and stir everything together until smooth. Pour the wet mixture into the dry and stir until well combined. Stir in the raisins.
  • Roll the mixture into small balls, about 1 tablespoon per ball. Place in an airtight container and keep refrigerated for up to 2 weeks or freeze for a couple months.

Notes

  • If you don't like raisins dried cranberries are a great substitution.
