Prosciutto Wrapped Goat Cheese Stuffed Dates
Medjool dates stuffed with goat cheese, pecans, and thyme, then wrapped in a salty piece of prosciutto!

- 12 medjool dates, pitted
- 2 ounces goat cheese, softened
- 2 ounces low fat cream cheese, softened
- 1 teaspoon chopped fresh thyme
- 2 tablespoons chopped pecans
- 1/8 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 6 slices prosciutto, cut in half lengthwise
In a small bowl whisk together all of the ingredients except the dates and prosciutto.
Spoon about half of a teaspoon of the cheese filling into the dates.
Close the dates then wrap a piece of the prosciutto around each one and secure it with a toothpick.
Serve immediately or cover the dates with a piece of plastic wrap and refrigerate until you are ready to serve.
