Oatmeal
- 1 cup old fashioned oats, gluten-free if needed
- 1 1/2 cups water, or milk of choice for a creamier oatmeal
- 1/4 teaspoon kosher salt
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
Cheesecake Filling
- 2 tablespoons plain Greek yogurt
- 1 tablespoon low fat cream cheese, softened
- 2 teaspoons maple syrup
- 1/4 teaspoon vanilla extract
Raspberries
- 1/2 cup raspberries, plus extra for topping the oatmeal
- 1/2 teaspoon maple syrup
Oatmeal
In a medium sized saucepan, bring the milk or water to a boil. Add in the oats and salt and lower the heat to medium low. Simmer the oats uncovered for about 5 minutes, stirring occasionally.
Remove the oats from the heat and stir in the maple syrup and vanilla. Let the oats sits for another couple minutes until they have absorbed the remaining liquid.
Pour the oatmeal into two bowls and gently mix in the mashed raspberries and cheesecake filling. Top with any remaining cheesecake filling and more fresh raspberries if desired.
