- 8 ounces low fat cream cheese room temperature
- 1 cup plain Greek yogurt
- 2 cloves garlic minced
- 7 ounce jar roasted red peppers drained and diced
- 8 ounces frozen spinach defrosted and squeezed to remove excess liquid
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 ounces mozzarella cheese shredded
- crackers for serving
Preheat oven to 350° F. and spray an 8x8 or similar size baking dish with cooking spray.
Combine all of the ingredients in large bowl, reserving a little bit of the mozzarella cheese for topping the dip.
Using a rubber spatula, fold everything together until it is completely combined.
Pour the dip into the prepared baking dish and spread it out into an even layer. Top it with the remaining cheese. Bake the dip for 25-30 minutes or until bubbly and golden brown. Serve immediately with cracker or crostini.
