This White Bean, Artichoke and Tomato Salad is dressed in a simple lemon vinaigrette and full of fresh herbs.

Ingredients

  • 15 ounce can cannellini beans, drained and rinsed
  • 14 ounces canned artichoke hearts in water, drained and chopped
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon sun dried tomatoes, chopped
  • 1/4 cup chopped flat leaf parsley
  • 1 tablespoon chopped fresh basil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • Kosher salt and fresh ground black pepper to taste

Instructions

  • In a large bowl whisk together the lemon juice, olive oil, salt and pepper. Add in the remaining ingredients and stir together until coated in the dressing. Taste for seasoning. Serve immediately or cover and refrigerate until ready to serve.
