So, did you get your taxes done or are you still scrambling to get them finished? Luckily my husband took care of ours this year and mailed them out last week. Let’s just say he was in a less than stellar mood when he was writing out the check. But, what are you going to do! At least we don’t have to deal with it again for another year, thank goodness for that! To help get us all out of our tax day funks I made a delicious and colorful dinner that is sure to make you smile, Cilantro Lime Shrimp Quinoa Bowls!
These bowls are packed with so many of the things I love and hopefully you love too! Shrimp, cilantro, lime, mangos, black beans, rainbow quinoa, and some seriously addicting avocado crema drizzled on top. The flavors are a combination of Southwest and tropical and they go together so well. The bowls are extra filling with all the protein from the shrimp, black beans, and quinoa and they taste so much better than any bowl you could go out and buy at a restaurant!
