Spring seems to be flying by! We don’t have any plans set in stone for Sunday, but I am looking forward to a good breakfast followed by nice long walk or hike later in the day to help burn it all off. One thing I plan on making for our breakfast/brunch are these Granola Cups with Peanut Butter Yogurt, Bananas and Chocolate.

Boy was it a showstopper and a delicious one too! I was really nervous when I made my first granola crust that it would fall apart or get stuck to the pan, but it actually turned out perfect. A granola crust is a nice alternative to a traditional pie crust. It’s healthier, can easily be made gluten-free by using gluten-free rolled oats and it’s totally breakfast approved!

Instead of making one big tart like I had before, I went the mini route and made granola cups in my muffin tin. They’re the perfect size for brunch and you don’t have to mess with cutting them into slices. The granola cups can be made in advance and stored in an airtight container in the freezer until you’re ready to use them too.

The peanut butter yogurt gets spooned into the granola cups then topped with a couple slices or fresh banana, a drizzle of dark chocolate and chopped peanuts. It’s like eating the best peanut butter banana sandwich, only way more fun because of those granola cups!

Granola Cups with Peanut Butter Yogurt, Bananas and Chocolate

Ingredients 

Granola Cups

  • 1 1/2 cups rolled oats gluten-free or regular
  • 1/4 cup unsalted peanuts chopped
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon kosher salt
  • 2 tablespoons peanut butter
  • 2 tablespoons honey
  • 1/4 teaspoon vanilla extract
  • 1 egg white

Peanut Butter Yogurt

  • 1 1/2 cups plain non-fat Greek yogurt
  • 2 tablespoons peanut butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Other Ingredients

  • 1 banana sliced
  • 1 ounce dark chocolate melted
  • 2 tablespoons peanuts chopped

Instructions 

  • Preheat oven to 325° F. and generously spray a standard muffin pan with cooking spray.
  • In a large bowl stir together the oats, peanuts, cinnamon and salt until combined.
  • In a small microwave safe bowl add the peanut butter and honey and microwave 10-15 seconds so they can easily be whisked together. Don't let the mixture get hot. Whisk the vanilla into the peanut butter mixture then pour it in with the dry ingredients, add in the egg white. Use a rubber spatula to stir everything together until it's all coated.
  • Divide the oat mixture evenly into the prepared muffin pan and use parchment or wax paper to firmly press it into the bottom and up the sides of the muffin cup. Bake for 14-16 minutes or until the edges are browned and crisp, cool completely in the muffin pan.
  • In a large bowl whisk together all of the ingredients for the peanut butter yogurt until smooth. Cover the bowl with plastic wrap and store in the refrigerator until ready to use.
  • Once the granola cups have cooled remove from the pan and fill with the peanut butter yogurt. Top with banana slices, drizzle with melted dark chocolate and sprinkle with chopped peanuts. Serve immediately to prevent the cups from becoming soft.

Notes

If you want a lower fat and calorie peanut butter yogurt, powdered peanut butter may be used instead. You may need to increase the amount from 2 to 3 tablespoons.
