Sorry for not sharing a recipe on Monday, but I figured everyone would be out enjoying the day and hopefully not tied to their computer. I was definitely not tied to my computer, in fact I took the labor in Labor Day to a whole new level.

They’re great for any meal or an afternoon snack!Monday I climbed my first fourteener, Mt. Bierstadt, with two of my cousins and my uncle. Of all the fourteeners in Colorado it’s one of the easiest, but this hike was no joke. I consider myself to be in good shape, but when your hike starts at 11,669 feet and goes up to just over 14,060 feet in only 3.5 miles it’s bound to leave anyone out of breath. The hardest part for me was climbing over all the rocks the last mile or so. The “trail” really wasn’t defined so you were pretty much following whoever was in front of you and hoping they were taking the best route.

They’re great for any meal or an afternoon snack!Once we passed the 13,000 foot elevation point I really started to slow down. Between the altitude and the trail getting much steeper and less defined, this mountain really started to become a challenge. Luckily it was a clear and sunny day, usually you have to worry about afternoon thunderstorms this time of year. I was so happy it was sunny because the wind was fierce in some areas and the temperature dropped into the 30’s at the top. I had on all my layers of clothes and was still feeling a little hypothermic at the top. I’m so happy I was able to have this experience even with all the soreness in my calves that followed the next day. If you’re ever looking for a challenge and you love endurance exercise, put climbing a fourteener on your bucket list!

I’m finally sharing a toast recipe and although mine doesn’t involve smashed avocado on top, I’m pretty thrilled with the flavor of the toppings on this one. The white beans (cannellini beans) are flavored with fresh lemon, rosemary, thyme and a little garlic. It’s blended up, then spread all over crusty whole grain toast. On top of the white bean spread are sautéed mushroom with more fresh thyme and a little parsley. Who knew a piece of toast could have so much flavor and be so satisfying!
