No Bake Strawberry Cheesecake Parfaits

These no bake strawberry cheesecake parfaits are perfect for spring and summer! They’re made with lighter ingredients, but still have all of that wonderful vanilla cheesecake flavor!
These parfaits will knock your socks off! I mean just look at them, they are screaming to be eaten, and that they were!
Last weekend when I was at the store I saw some beautiful boxes of strawberries. They were perfectly red which is not normal this time of year, and when I picked them up they actually smelled like strawberries. I knew I had to buy a box and make something with them. My husband and I are both cheesecake fans, but the last thing I need is a whole cheesecake sitting in my fridge. Between the both of us we would devour the whole thing in one sitting, probably not the best idea.
Whenever I think about cheesecake I’m reminded of one of my favorite episodes of the show Friends. Rachel and Chandler are fighting over a cheesecake that was accidentally delivered to their apartment and end up dropping it in the hall. They then proceed to get down on the ground and eat the cheesecake that hasn’t actually touched the ground. Sadly, I can totally see myself doing something like that!
I couldn’t get cheesecake off my brain as I wandered around the store. I started thinking about how I could make it in a more modest portion and a little healthier. I remembered seeing recipes for Greek yogurt cheese cake and thought this would be the way to go. I also love making layered desserts in glasses or jars and knew that a no bake strawberry cheesecake parfait would be the perfect weekend dessert. To make this no bake strawberry cheesecake parfait I started by chopping up 2 cups of strawberries and then sprinkled a teaspoon of sugar over them. I stirred them up and then let them sit in the fridge while I got the cheesecake portion ready. For the cheesecake I used 12 ounces of plain non fat Greek yogurt, 6 ounces of low fat cream cheese, a teaspoon of vanilla bean paste (I love the little black flecks from it), 1/2 cup of powdered sugar, and a tablespoon of strawberry shortcake vodka. The vodka of course is optional, but it added an amazing strawberry flavor to the cheesecake. I beat everything together in my mixer until it was creamy and smooth. I then used martini glasses to put the parfaits in. I did a layer of the strawberries topped with a layer of the cheesecake. I repeated this process ending with the beautiful strawberries on top.
The parfaits looked so beautiful and tasted even better than they looked! My husband and I devoured them in minutes, no surprise there. These beautiful layered no bake strawberry cheesecake parfaits are so easy to make and would make a beautiful dessert for Valentine’s Day, I have a feeling I will be making them again very soon!
No Bake Strawberry Cheesecake Parfaits
Ingredients
- 2 cups diced strawberries
- 1 teaspoon sugar
- 12 ounces plain non fat Greek yogurt
- 6 ounces low fat cream cheese room temperature
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
Instructions
- In a small bowl mix the diced strawberries and teaspoon of sugar, place in the fridge to macerate and chill.
- In the bowl of a stand mixer add the room temperature cream cheese and beat for several minutes until fluffy. Add the Greek yogurt, vanilla, powdered sugar to the cream cheese and beat on medium speed until the mixture is smooth and creamy.
- In 4 glasses, layer the strawberries and cheesecake, ending with the strawberries on top. Chill in the fridge for at least 30 minutes.
