Lightened up, creamy and bursting with fresh lemon flavor, these Greek Yogurt Lemon Cheesecake Bars are the perfect dessert to make this spring!
Here I was thinking maybe spring really has started, maybe it will be different this year in Colorado. I mean I’ve been wearing shorts almost every day for the past couple weeks and it’s been in the 60’s and 70’s for what feels like a month. Well it appears my luck ran out and reality is coming back to bite me in the butt because snow is in the forecast for Friday and I’m pretty disappointed.
I know we desperately need the moisture, we haven’t had snow in a long time, but I would really prefer if this Friday’s storm came in the form of rain. Don’t get me wrong I love the snow, BUT I can’t stand when it does it on a Friday or Saturday. If it’s enough snow to stick to the ground then it makes my Saturday morning long run either cold, slow, icy and frustrating or I’m stuck running 18 miles on the treadmill…honestly I’m not sure which one is worse. I’m keeping my fingers crossed that the snow comes early Friday and doesn’t mess up the sidewalks and roads with ice so I can at least still get outside and run, even if it is freezing. In the meantime I’ll keep pretending spring is actually here, which it will be on Sunday, and dream about these Greek Yogurt Lemon Cheesecake Bars I made a couple weeks ago when it was sunny and warm!
These bars have everything I love in them. Fresh, tart, citrusy lemons, creamy Greek yogurt and cream cheese and don’t forget the graham cracker crust! Because shorts season and swimsuit season are going to be here soon….hopefully, I lightened these cheesecake bars up so you can still enjoy they’re sweet wonderful spring flavor without any guilt.
