I could do with a few more days off of work, but I’m ready for the return to healthy eating, I usually can’t do more than a couple days of rich food and cocktails. Tonight’s dinner will include Lemon Rosemary Grilled Chicken and the recipe I’m sharing today, Lemon Parmesan Grilled Asparagus.

Lemon Parmesan Grilled AsparagusMy birthday was yesterday and we spent the weekend up in the mountains in Vail. It’s becoming a tradition that we head to the mountains for my birthday, although I’m starting to think I should start planning my birthday trip to the beach. We lucked out last year and it was sunny and nearly 70 degrees the whole time. This year we weren’t as lucky and it was in the 50’s with rain. Not ideal, but we still had a blast!

After a few days of eating out for nearly every meal and eating dessert every night, I’m always ready to get back to cooking and my normal eating routine. As much as I love eating out, it tends to mess with my stomach and leave me feeling bloated. I’m sure the cocktails don’t help either.  

Lemon Parmesan Grilled AsparagusI made this Lemon Parmesan Grilled Asparagus on a whim a couple weeks ago. It was nice outside finally and I was in the mood to grill. Asparagus is in it’s prime right now and I grab a beautiful bunch of it at Whole Foods. When grilling isn’t an option roasted asparagus is my cooking method of choice. However, once it’s nice enough to grill, that’s my absolute favorite way to prepare it. 

Lemon Parmesan Grilled AsparagusThis Lemon Parmesan Grilled Asparagus not only takes 15 minute or less to make, but you also only need three ingredients to make it (assuming you don’t count olive oil, salt and pepper).

While the grill heats up, toss the asparagus in olive, salt and pepper. When I grill asparagus I prefer to buy the fatter stalks instead of the real thin ones. They’re easier to turn without losing them in the grill grates. After the asparagus is grilled and tender remove it onto a serving plate. Zest a lemon over the top and squeeze on the juice. Sprinkle on fresh grated parmesan cheese and that’s all there is to it! I promise it will be your new favorite way to eat asparagus!

Lemon Parmesan Grilled Asparagus

Ingredients 

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • Kosher salt and fresh ground black pepper to taste
  • Zest of a lemon
  • 1/2 lemon juiced
  • 3 tablespoons shredded parmesan cheese

Instructions 

  • Preheat grill to high heat. In a large bowl or sheet pan, drizzle the olive oil over the asparagus and season with salt and pepper. Toss to coat then lay them onto the heated grill. Grill for 3-5 minutes or to desired tenderness. Roll or turn them once to get grill marks on both top sides.
  • Remove the asparagus to a serving platter and top with lemon zest, lemon juice and shredded parmesan cheese.
