Mini Bacon Butternut Squash Cups are an easy appetizer for parties or the holidays. Butternut squash, sage, Greek yogurt and cream cheese are puréed until smooth then spooned into mini phyllo shells. Top them with salty bacon for the perfect fall bite!
Happy Friday friends! I’m so glad the weekend is finally here. It’s been a busy week full of appointments and locking myself out of the house, yep I totally did that.
Yesterday I went out for my daily walk to take my eyes off the computer and get some fresh air. I always lock the door behind me and then go in through the garage. Until now I’ve never carried a key or my phone with me because I’m usually not gone very long and not too far away from the house. So I get back from my walk and push the code into the garage keypad, the door opens about 4 inches then closes. It proceeds to open and close about 20 times, but never enough for me to get in. I’m sure I looked like a complete fool lying on the driveway looking underneath to see if something was blocking the door from opening all the way. After about 10 minutes and plenty of cursing in my head I realized I was screwed.
None of the neighbors were home so I couldn’t ask to use their phone and call my husband to come open the door for me. My next option was to walk a mile down the road to my aunt and uncle’s house and hope they were home and still had a spare key to our house. I got to their house and rang the door bell…no one answered. I rang again, still no answer. I had a pretty good idea what their garage code was so I put in my first guess. Wrong. Second guess, wrong. Finally on the fourth try it worked, thank God!
Turned out my aunt was home and just like something I would do, didn’t answer the door. Anyways, she had a spare key and this moron finally got back in her house. Lesson learned, I will now be carrying a spare key with me. Please tell me that some of you have had stupid moments like this?! This has nothing to do with these Mini Bacon Butternut Squash Cups that I made today, but I figured you might get a little laugh out of my story. Well, I did laugh, but only because I locked myself out twice last year! And I’m terrified of leaving the house w/out keys, even though we have a keypad on the front door and the garage! Ha! Glad your family is nearby! Now these little cups are beauties! What a fun fall appetizer — perfect for Thanksgiving!

Oh Danae – don’t feel bad at all – I don’t have a garage to get into my home from, but I have this annoying habit of locking those knob locks before walking out – well, one time I turned the knob to the lock position and walked out closing the door shut to get to my car in the driveway and find that I didn’t have my keys! I ended up calling a locksmith who charged me extra because of the type of lock I had! And what makes this even worse is that I did this twice before giving my neighbor a key!
Btw, these little cups are not only gorgeous AND the perfect appetizer for parties, but Squash+bacon=winning at life!
