It’s perfect for when you get a pizza craving, but want/need something a little healthier and more wholesome.

The next time you get a pizza craving, try making this healthier and more wholesome One Pot Supreme Pizza Quinoa Casserole! An easy dinner the whole family will love!I hope you aren’t getting tired of the easy, skillet/one pot meals because honestly I’m really enjoying making them. Not only does it save me from having to spend a ridiculous amount of time standing in the kitchen making dinner, but I’m loving how few dishes I have to wash! I’m guessing most of you are cool with less dishes and time spent making dinner…am I right?

Pizza is one of those foods that I never get tired of. I still can’t put my finger on what’s so addicting about it, (probably all the melted cheese) but it’s one of those meals I could eat every week and not get tired of.

Of course if I ate pizza as often as I would really like too, I’d have to go buy a whole new wardrobe that was about 4 sizes larger. In order to feed my pizza craving and do it in a way that would let me keep all of my current sized clothes I came up with this One Pot Supreme Pizza Quinoa Casserole.

An easy dinner the whole family will love!It’s been a while since I made something with quinoa and I always forget how much I love it. I love the texture and how much protein it has in it. This one pot version is based off of my Turkey Taco Quinoa Skillet that I made last year. It’s been such a popular recipe that I decided it was time for a new flavor.

All the flavor of pizza is packed into this one pot casserole. Everything from the pizza sauce, mozzarella cheese and of course the toppings. I used turkey sausage, bell pepper, red onion, black olives and spinach. However, if any of these are unappealing to you, they can easily be swapped out with your favorites.
