Open-Faced Egg, Avocado and Hash Brown Breakfast Sandwiches

It’s time for some more breakfast love you guys, you know my favorite meal of the day! Savory breakfasts are where it’s at for me during the week, I prefer to indulge in the sweet stuff on the weekends. In case you’re new to the blog or maybe you missed the 100 posts where I’m sure I’ve already said this, every morning for me starts with running. If I don’t get my run in first thing in the morning, look out! I’m about as routine as my cats when it comes to my morning ritual. Running in the morning wakes me up and gives me energy no matter how tired I am when my alarm goes off. I love watching the sun rise, being out when the streets and trails are quiet and running into the occasional wild animal on the hunt for breakfast…preferably not me.
Following my run I head to the gym for a quick weight lifting and core workout then race home and shower so that I can dig into my favorite meal of the day! My breakfast routine always includes protein and usually in the form of eggs. I’m not a big fan of eating a ton of bread in the mornings because it leaves me feeling sluggish. I prefer a balance of protein and carbs for breakfast and this Open-Faced Egg, Avocado and Hash Brown Breakfast Sandwich is just that.
This tasty little open-faced breakfast sandwich is healthy, vegetarian, gluten-free and totally filling way to start the day! There is plenty of protein and healthy fats in this sandwich thanks to the mashed avocado and that gorgeous fried egg on top that will help curb those mid-morning munchies. The carbs come from the english muffin and these awesome new Dr. Praeger’s Four Potato Hash Browns I recently had the opportunity to try. If you aren’t familiar with Dr. Praeger’s, they are an independent, family-owned and operated business that believes in using simple, whole ingredients to make great-tasting products. If you know me at all, you know that I’m all about products that are made with simple wholesome ingredients that I can pronounce and not have to look up on the internet.
These Open-Faced Egg, Avocado and Hash Brown Breakfast Sandwiches are not only tasty, but easy to make as well. Simply mash up half an avocado in a bowl with a little lemon juice, salt and pepper. Toast half an english muffin or the whole thing if your extra hungry or sharing and while it’s toast fry an egg. To assemble the sandwich spread some of the avocado mash onto the english muffin, add a slice of tomato, one of the Dr. Praeger’s Four Potato Hash Browns and top it off with that gorgeous egg. This breakfast sandwich is sure to keep you full and satisfied all morning long!
Open-Faced Egg, Avocado and Hash Brown Breakfast Sandwiches
Ingredients
- 1 English muffin split in half and toasted
- 2 slices of tomato
- 2 Dr. Praeger's Four Potato Hash Browns
- 1 avocado
- Juice of half of a small lemon
- 3-4 dashes of hot sauce optional
- Kosher salt and fresh ground black pepper to taste
- 2 eggs fried or cooked to your liking
Instructions
- In a bowl mash together the avocado, lemon juice, hot sauce, salt and pepper until desired consistency is reached.
- Toast the English muffin halves.
- While the English muffin is toasting fry the eggs.
- Spread some of the avocado mash on top of the toasted English muffin halves and top with a slice of tomato, one of the Four Potato Hash Browns and a fried egg.
- Sprinkle with salt and pepper and serve immediately.

Iโm so impressed you can bring yourself to get up every morning for that run! I usually have to drag myself to the gym in the morning and by time I get there Iโm good but that first half hour is hard. This breakfast looks amazing and I canโt wait to try it.
