This post is for all the snackers out there! I don’t know about you guys but I have to have snacks throughout the day. These Pistachio and Dried Cherry Yogurt Parfaits are the perfect healthy snack that can be thrown together in minutes and will keep you full for hours!

I find myself snacking several times during the day. Once in the morning, later in the afternoon, and again before going to bed. I never like to go too long without eating in order to keep my energy high and prevent myself from pigging out because I got too hungry. When I make myself a snack I like to make sure there is plenty of protein in it so it keeps me full longer. These yogurt parfaits are seriously the perfect snack! They have creamy plain Greek yogurt that I sweeten with a little honey and then layer with the most delicious pairing of dried tart cherries and crunchy, salty pistachios! The combination is a creamy, sweet, salty, and crunchy explosion of healthy goodness!

Let’s talk about the star of these parfaits, the pistachio. I absolutely love pistachios and the good news is they are considered the “Skinny Nut”! They are one of the lowest calorie and lowest fat nuts, full of fiber, and among the highest in protein. You can eat about 30 pistachios for only 100 calories, now that’s a lot of nuts! They are the perfect way to cure that salt craving in a healthy way. Another reason I love pistachios is that I have to do a little work in order to get to that delicious nut. By having to crack the nut out of the shell it prevents me from just grabbing handful after handful, not to mention the shells are a great visual cue for me to see how many I’ve eaten.

Along with tasting great and being one of the lowest calorie nuts, pistachios also offer many health benefits. A recently study from the New England Journal of Medicine stated that a handful of pistachios a day, may have a role in health and longevity. I swear, I think the pistachio might be a magical nut. It tastes great, it’s lower in calories, you get to eat more of them, and it promotes good health!     YES. Pistachios are my most favorite nut EVER. And then with yogurt and cherries? Well, you may have gotten me to take a break from oatmeal for breakfast because this looks great! Pinned :)

    These parfaits look perfect! I love pistachios too! They are one of my favorite nuts. I love to snack on them too. I am like you, I always need a snack of some sort. I've learned that I need healthy snacks cause brownies and cookies aren't healthiest of snacks. :) Pinned!

    I am TOTALLY a snacker!! Love these delicious looking parfaits, and I adore the cherry-pistachio combination. And I just read somewhere that pistachios are the lowest calorie nut, with walnuts as the highest, I couldn't believe it and thought they had it backwards...I will take pistachios over walnuts any day of the week ;)
