Aren’t you glad it’s Friday!? What do you do with your Friday nights? Around here it’s pretty quiet most of the time. I used to love going out and staying up late, but ever since falling in love with running my Friday nights are a little more laid back.

Saturday mornings are typically when I do a long run so I need the extra sleep and time off my legs. I know it sounds pretty boring and sometimes it is, but when I’m training for a race like I am now I take my long runs seriously.

Another thing I take seriously is recovering after long runs or hard workouts. The three biggest parts to recovering are hydrating, eating right, and getting enough sleep. Today I want to talk about hydration.

Not only do you need to increase the amount of water you drink, but also the electrolytes assuming you are sweating more.

Most people grab a sports drink when they need to replace electrolytes, but I have issues with the amount of sugar and calories in sports drinks. Sure they taste refreshing, but I prefer to eat my calories. A great natural alternative I’ve discovered is coconut water.

A few fun facts about coconut water are; one serving has more potassium than 4 bananas, it’s naturally fat and cholesterol free, and it has fewer calories, less sodium, and more potassium than sports drinks.

About a week ago I received a sample of Cocozia Organic Coconut Water. While coconut water isn’t my favorite drink in the world, I was impressed with Cocozia’s coconut water and appreciated that it was 100% organic and non-GMO.

I definitely recommend drinking it ice cold, over ice is even better. The flavor is slightly sweet, nutty, and a little milky. Some people might find the flavor unappealing and if you find yourself not liking it try blending it with some berries or pineapple, that’s my favorite way to drink it.

These popsicles are super refreshing, perfectly sweet, and most importantly ice cold.

These popsicles are about as easy as it gets to make and consist of only 3 ingredients! To make the popsicles, pour the coconut water into the blender. Add 2 cups of fresh, hulled, strawberries, and 2 tablespoons of agave nectar. Blend everything together, then pour it into your popsicle molds and freeze. See, how easy was that?!

The next time you finish your workout at the gym, an afternoon hike, or a just need a mid day pick up, put down the sports drink and try a glass of coconut water or these sweet and refreshing Strawberry Coconut Water Popsicles!

Ingredients 

  • 16.9 ounce container coconut water
  • 2 cups of strawberries hulled
  • 2 T. agave nectar

Instructions 

  • Put all of the ingredients in a blender and blend until smooth.
  • Pour the mixture into popsicle molds and freeze for at least 4-6 hours.

    Could I replace the agave nectar with maple syrup and still get roughly the same taste? I’ve never used agave before so I’m not sure what that tastes like.

      Absolutely. Either maple syrup or honey would work fine.

      Thanks Bri! I actually prefer to blend my coconut water with some fresh or frozen fruit, gives it more flavor, plus a little fruit never hurt anything!

      Definitely give it a try Krista. If you aren’t big on the plain coconut water they have lots of different flavors now, even chocolate and coffee!
