Zucchini Bread Oatmeal

Zucchini Bread Oatmeal has all the flavors that you would find in the bread and you don’t have to worry about overindulging!
Is it just me or am I the only one who can’t leave sweet quick breads, like zucchini bread alone? They are one of my favorite things to bake, but I have a serious love hate relationship with them. Baking a quick bread is almost foolproof, unlike yeast breads. It’s sort of like baking a giant muffin. They also remind me of cake without the frosting and one that is acceptable to eat for breakfast. Those are the reasons I love quick bread.
The reason quick breads and I don’t get along is I can never just stop after one slice. Zucchini bread, banana bread, pumpkin bread, you name it and I’ll eat it. I love a slice warm right out of the oven and I say that’s all I’m going to have, but it never is. I find myself coming back throughout the day cutting off another piece each time I walk by, I’m weak.
Since I don’t need 10,000,000 carbs all in one day, this Zucchini Bread Oatmeal is the perfect solution! I can still have all the flavor I love in the bread, eat it warm like I would that first slice out of the oven, and not have to worry about eating it all day long. I love when I can solve first world problems like this.

I get to use my garden fresh summer zucchini, but I’m slowly transitioning to warm breakfasts and snacks instead of smoothies and popsicles. What a great flavor for oatmeal! I’m the same way when it comes to quick breads. I eat way more than I should! I need to try this soon!
