Baked BBQ Chicken Egg Rolls with BBQ Ranch Dipping Sauce

Baked egg rolls stuffed with slow cooker shredded BBQ chicken and cheese, then served with a lightened up BBQ ranch dipping sauce are a delicious and easy appetizer!
My two years streak of not getting a cold ended this past weekend and it’s made for a lousy week so far. Luckily, I’m finally starting to feel better after several days of feeling like death. I’m usually pretty tough when it comes to getting sick, but this time it really got to me. On top of sounding like a heavy smoker, I felt like I had a knife going down my throat every time I swallowed and about the only thing that made it feel better was drinking something hot.
Getting sick really grosses me out. The thought that I contracted this from someone I probably don’t even know is disgusting. I’m not a complete germaphobe although my husband might disagree with that statement, but if I let my mind wander too much about germs, dirty hands, and bodily fluids I find myself grabbing the disinfectant spray and wiping everything down like a mad woman.
Fortunately since the worst of this stupid cold has passed we are able to continue with our planned trip to Aspen today. As an early anniversary trip, my husband and I are headed to the mountains to spend a couple days at the Hotel Jerome. I’m thrilled to be spending some time at this gorgeous landmark boutique hotel and in beautiful Aspen! I’m hoping there will still be some gorgeous fall colors up there and will be sure to share them with you on Instagram if there are.
So now that I’ve rambled on about my cold, my issues with germs, and how excited I am to be going to Aspen, I suppose I should talk about these Baked BBQ Chicken Egg Rolls with BBQ Ranch Dipping Sauce. Plain and simple, you need to make them! If you love BBQ flavored things and you love fun finger food, then these egg rolls are for you.
They make for some great game day grub, an easy party appetizer, or a fun dinner. The shredded BBQ chicken is made in the slow cooker which can be done ahead of time, so really the only thing to do is assemble and bake the egg rolls. The BBQ ranch dipping sauce tastes great with the egg rolls and is made healthier by using Greek yogurt instead of mayo or sour cream. And of course since the egg rolls are baked your hands won’t be covered in grease and you don’t have to feel bad when you eat 3 of them like I did!
Baked BBQ Chicken Egg Rolls with BBQ Ranch Dipping Sauce
Ingredients
Baked BBQ Chicken Egg Rolls
- 3 boneless skinless chicken breasts
- 1/2 cup BBQ sauce
- 1/4 cup low sodium chicken broth
- Salt and pepper to taste
- 1/2 cup frozen corn defrosted (optional)
- 1/2 cup shredded cheddar or Monterey jack cheese
- 15 egg roll wrappers
BBQ Ranch Dipping Sauce
- 1/2 cup plain non-fat Greek yogurt
- 3 tablespoons low fat buttermilk
- 1 tablespoon BBQ sauce
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon worcestershire sauce optional
- 3/4 teaspoon dried parsley
- 1/2 teaspoon dried onion flakes
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dill weed
- Kosher salt and fresh ground black pepper to taste
Instructions
Baked BBQ Chicken Egg Rolls
- In a small bowl whisk together the BBQ sauce, chicken broth, salt and pepper.
- Place the chicken breasts in a slow cooker and cover with the sauce.
- Set the slow cooker to low, cover, and let cook for 4-6 hours or until the chicken is tender and shreds easily.
- Shred the chicken with 2 forks and stir in the frozen corn.
- If the chicken needs more BBQ sauce go ahead and add more now.
- Preheat your oven to 400 degrees and line a baking sheet with parchment paper.
- Fill each egg roll wrapper with a couple tablespoons of the shredded chicken, being careful not to overfill them.
- Top the chicken with some of the shredded cheese.
- Brush all around the edges of the egg roll wrapper, then tuck in the sides, and roll it up tightly like a burrito.
- Seal the end of the egg roll with a little more water then place it seam side down on a baking sheet lined with parchment paper.
- Continue the process until all of the egg rolls are made.
- Spray or brush the tops of the egg rolls with oil then place them on the middle rack of the oven and bake for 12-15 minutes or until they start to turn golden brown.
- Remove from the oven and serve with the BBQ Ranch Dipping Sauce.
BBQ Ranch Dipping Sauce
- In a small bowl whisk together all of the dip ingredients until smooth.
- Cover and refrigerate until ready to serve.
