The week of Christmas is finally here! It feels like it showed up faster than usual. This past weekend was spent scrambling around doing most of my shopping and baking and doing it all in ass cold weather. Sorry, but when the high is 8 and low is -5 there’s no other way to describe it.
The only thing left to do is make the dreaded trip to the post office and stand in line for who knows how long. Assuming I get that done today I can spend the rest of the week relaxing and enjoying Christmas.
I sort of feel like I haven’t gotten into the spirit of everything much this year. I blame it on my husband for not letting us have a Christmas movie marathon every weekend since the beginning of the month…kidding. Whatever the reason is I intend to hopefully change that this week.
This year we’ll be spending Christmas Eve at my aunt and uncle’s house, which lucky for us is only a mile away. I always like to help my aunt out with the food, shocker, I know. Usually I’m in charge of dessert and once again I am this year as well. I also told her I’d make these Baked Brie and Fig Jam Bites.
Usually I don’t want to hassle with having to make an appetizer right before people arrive, but when it’s as easy as these bites, I’ll make an exception.
The Baked Brie and Fig Jam Bites literally take 10 minutes total to make and bake. They also only require 4 ingredients. The day I made them I ate 4 immediately after photographing them and my husband polished them off that night with dinner. Needless to say we both really liked them.
The chunks of brie cheese are placed in mini phyllo cups which are the perfect crunchy vessel for the gooey, warm, melted brie. They are baked for 5 minutes then immediately topped with the fig jam when they come out of the oven.
If you aren’t a fan of fig jam top them with your favorite. I recommend raspberry, apricot or something more adventurous and spicy like blackberry jalapeño. I’m thinking I’ll give the spicy sweet a try on Christmas Eve.
The final step is to sprinkle the bites with chopped toasted pecans. It’s the perfect stress free appetizer to serve and I guarantee there won’t be any leftovers!
Baked Brie and Fig Jam Bites

Ingredients
- 4 ounces brie cheese, rind cut off and cut into approximately 1/2 inch chunks
- 3 tablespoons fig jam, or jam of choice
- 2 tablespoons toasted chopped pecans
- 15 mini pre-baked phyllo shells
Instructions
- Preheat oven to 400 degrees.
- Place the phyllo shells on a baking sheet.
- Place the brie in the phyllo shells and bake for 5 minutes or until melted.
- Remove from the oven and top with approximately 1/4 teaspoon of jam and a few chopped pecans.
- Serve immediately.

Hi Tere, Unfortunately they are best made and eaten the same day. They really don’t take long to make at all especially if you cut the brie the night before.

Do you make your own fig jam or do you purchase it…I don’t recall seeing a fig jam in the stores…help please as this looks so delicious!

I have made my own fig jam before, but only when figs are fresh. For this recipe I bought my jam at Whole Foods.
