It’s finally warmed up here in Colorado and the weather is perfect for grilling. I’m sure there will be one last snow before Memorial Day, there always is, but until then I’ll keep taking the cooking outside and making easy, fresh meals like this chipotle lime grilled chicken with mango salsa.

For the last few years we’ve thrown a Cinco de Mayo party at our house and I look forward to it every year. Of course this year that won’t be happening and it will just be a party for two with my husband and I. That doesn’t mean we can’t enjoy great Mexican inspired food.

This chipotle lime grilled chicken will of course be happening, along with this Mexican Corn and Green Chile Dip and I’m very tempted to make a Tres Leches Cake for dessert. Since the rest of the meal is healthy, I’ll consider that justification for making an entire cake for two people.

What Do I Need to Make the Grilled Chicken and Mango Salsa?

  • Boneless skinless chicken breasts
  • Canned chipotles in adobo sauce
  • Olive oil
  • Limes
  • Honey
  • Cilantro
  • Mangos
  • Red bell pepper
  • Red onion
  • Chili powder

How to Make Chipotle Lime Grilled Chicken

Making this chicken is easy, but keep in mind that you will need to marinate the meat for a couple hours or overnight if you prefer. 

  1. Whisk together the lime zest, juice, chipotle chile, honey and chopped cilantro. 
  2. Place the chicken breasts in a freezer bag and pour in the marinade. Squeeze out the air in the bag as you’re sealing it.
  3. Massage the marinade into the chicken and then put it in the refrigerator for at least 2 hours or overnight.
  4. Heat your grill to about 400° F. and clean the grates. Spray the grates with cooking spray and then place the chicken on them. Shake off any extra marinade before putting it on the grill.
  5. Depending on the size of your chicken breasts they may take 6-8 minutes per side to cook. The internal temperature needs to be 165° F.

How to Make Mango Salsa

  1. Peel and dice the mango. Here’s an example of how to cut a mango. Add it to a mixing bowl along with the diced red onion, red bell pepper and chopped cilantro.
  2. Squeeze lime juice over the mixture and sprinkle in the chili powder. Season with salt and toss everything together until combined. Taste and adjust seasoning as needed.

The salsa should only take about 10 minutes or so to make, so you can do it while the chicken is grilling.

How to Serve the Chipotle Lime Chicken

There’s lots of ways you can serve this chicken, the simplest being to just eat it on it’s own with the salsa. Below are some of my favorite ways to eat it.

  1. Serve it over coconut rice like I’ve done in the photos. I used the same recipe that I did with these Coconut Lime Chicken Skewers.
  2. Make tacos. Slice the chicken and use it along with the mango salsa as the filling in your favorite tortillas. 
  3. Keep it low carb and serve over cauliflower rice. 
  4. Serve it with a side of black beans.
  5. On top of a salad.

Ingredients 

Chipotle Lime Chicken

  • 3 tablespoons lime juice
  • 1 1/2 tablespoons olive oil
  • 1 chipotle chile in adobo sauce finely chopped
  • 2 tablespoons chopped cilantro
  • 1 tablespoon honey
  • Kosher salt and fresh ground black pepper to taste
  • 1 1/2 pounds boneless skinless chicken breasts

Mango Salsa

  • 2 cups diced mango
  • 1/4 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • Kosher salt and fresh ground black pepper to taste

Instructions 

  • In a bowl whisk together all of the ingredients for the chicken marinade. Pour the marinade into a freezer bag, add in the chicken breasts, press out all the air and seal the bag. Massage the marinade into the chicken then place it in the refrigerator for at least 2 hours or overnight.
  • Heat the grill to 400ยฐ F. Spray the grates with cooking spray and place the chicken on the grill, shaking off any excess marinade. Grill the chicken for 6-8 minutes then flip and grill another 6-8 minutes. Grill until the internal temperature of the chicken is 165ยฐ F. Let the chicken rest for 5 minutes before slicing it.
  • While the chicken is grilling prepare the mango salsa. Combine all of the ingredients in a bowl and stir to combine. Taste for seasoning and serve on top of the chicken.
