These Honey Goat Cheese and Raspberry Phyllo Cups are perfectly portioned and couldn’t be easier to make! A delicious, no-fuss dessert that’s perfect for Valentine’s Day!
Was it just me or did January feel like it was about 50 days long? I don’t know what it was, but it felt like it would never end. Now I’m sure February will just fly by, which I’m totally fine with because that means we’re one month closer to warm weather! Before I get too far ahead of myself, I thought it would be fun to make a little something sweet for Valentine’s Day. These Honey Goat Cheese and Raspberry Phyllo Cups are perfect if you’re like me and not that into the holiday, but will gladly eat all the desserts.
I used to love Valentine’s Day when I was a kid. Making heart shaped mailboxes in elementary school and putting a Valentine card in everyone’s box was a thrill, especially when a piece of candy was taped to the card. These days the thrill has worn off and it feels more like a consumer obligation to go out and buy cards and candy. Yep, I’m kind of a Valentine’s Day scrooge.
Although I hate buying the cheesy, mushy card for my husband and everything in the shape of a heart I roll my eyes at, I do love to make a special dinner and dessert for us to enjoy. The only time we can do this is on the weekend since our work schedules don’t allow us to eat dinner together every night, but that’s ok, it’s the thought and action that count, not what day it’s done on.
While I don’t have the special dinner planned yet, I do plan to make these Honey Goat Cheese and Raspberry Phyllo Cups again. This is a dessert that anyone can make. No baking skills or special ingredients required. You can even make the filling ahead of time.
Goat cheese, Greek yogurt, honey, vanilla and almond extract are all whisked by hand or beaten together in an electric mixer until they’re combined. The filling gets spooned into prepared mini phyllo cups, then topped with a fresh raspberry. A garnish of chopped pistachios and a drizzle of honey and you have yourself a delicious and impressive looking dessert. The whole thing takes 10-15 minutes max to make and will be eaten in about 60 seconds. It’s a Valentine’s Day dessert even the scroogiest of us can muster up!
Honey Goat Cheese and Raspberry Phyllo Cups
Ingredients
- 15 mini phyllo shells
- 4 ounces goat cheese room temperature
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon almond extract, optional
- Pinch of salt
- 15 raspberries
- Chopped unsalted pistachios and honey for garnish
Instructions
- Use a whisk or an electric mixer to whisk together the goat cheese, yogurt, honey, extract(s) and salt until smooth.
- Divide the mixture evenly into the prepared phyllo shells. Place a raspberry on top of each one and garnish with chopped pistachio and a drizzle of honey. Serve immediately.
