Skip the takeout and make this better for you version instead!I can’t tell you guys how happy I am that the sun is back in Colorado and we’re warming up again! After the past week of cold and snow, then waiting for the snow to melt so I could run outside again without breaking my neck, it’s really making me crave summer. I would normally say spring, but to be honest spring tends to be one of the snowiest times of the year here. Don’t be surprised if sometime in March, April or even May I’m complaining about a big snow and being trapped inside running on the treadmill.

Skip the takeout and make this better for you version instead!When we get a warm streak during the winter, as in 60 degree temperatures, I start to crave light fresh foods. Lemon is one of my favorite ingredients to add to meals to give them that bright fresh flavor. Thank goodness lemons are readily available year round! Since it’s still a little too cold to stand out on the deck and grill, I opted to add lemon flavor to this Lemon Honey Chicken and Broccoli Stir-Fry.

It’s also a healthier and cheaper alternative to takeout when you get that Friday night craving. I know it’s not heavily coated in crispy batter and sticky sauce, and yes I love that too, but you’ll feel so much better physically and mentally if you make your own takeout!     i'm loving all the sunshine that lemons brings to winter too! this sounds like a great weeknight meal, and i bet the leftovers definitely don't disappoint. xo
