Happy Cinco de Mayo! It’s officially the day where eating tons of chips and salsa and drinking one too many margaritas is acceptable! I feel like I’ve been sharing lots of Mexican food recipes with you lately, but of course I had to share one more today. Over the weekend I made this delicious Mexican Quinoa Salad with Honey Lime Vinaigrette and tonight we will be enjoying it with some grilled chicken and a margarita.

Making the salad is actually quite simple. Start by cooking your red quinoa according to the package instructions. I chose to use red quinoa because I think it has a slightly nuttier flavor than regular quinoa, plus the color looks beautiful in the salad. I recommend always rinsing the quinoa before cooking it. It helps get rid of some of that earthy/dirt taste that quinoa can sometimes have. While the quinoa cooks chop up the red bell pepper, shallot, jalapeño, mango, and cilantro. Once the quinoa is cooked you will want it to cool to room temperature so it doesn’t soften the vegetables. When the quinoa is cool add all of your chopped vegetables and mango, plus 1/2 a cup of frozen defrosted corn, and a can of rinsed and drained black beans. Toss all of the ingredients in a large bowl. To make the dressing I combined grapeseed oil, honey, lime juice, chili powder, cumin, garlic powder, and salt. I shook them all up in a mason jar (whisking works too, I just have a love for mason jars) and poured the dressing over the salad. I gave the salad a final toss and served myself up a little bowl.
The flavors and textures of this Mexican Quinoa Salad are amazing! You get a little crunch from the quinoa and the vegetables, spiciness from the jalapeño, and a little sweetness and tang from the mango, lemon, and honey. It’s the perfect combination of flavors and the fiesta your tastebuds have been craving!
