I started my week with a trip to Cleveland for an event put on by the American Dairy Association Mideast. It was my first time in Cleveland, actually my first time in Ohio. Not only was the event a blast, but I also got to meet some other great bloggers in person! I’ll be sharing more about my dairy adventures in another post.

No Bake Apple Pie Bites | Easy to make no bake apple pie bites are the perfect fall dessert!Today’s recipe is a fun, easy to make, and super cute dessert made especially for my blogger friend Meg over at With Salt and Wit. Meg is pregnant with her first baby who is due next month and a group of bloggers and myself have gotten together to throw her an “All Things Fall” baby shower!

My contribution to Meg and her little boy are these No Bake Apple Pie Bites. I know for a fact that like myself, Meg loves mini desserts. I mean seriously, what’s not to love about a sweet little treat you can pop in your mouth? No cutting it into pieces, you don’t have to share, just open your mouth and enjoy that delicious bite!

Apple desserts are probably my favorite thing to eat in the fall, maybe even a little more than the pumpkin ones. I wanted to make something that didn’t require turning on the oven and having to bake, so a stovetop apple pie filling was the way to go. This apple pie filling is just like what you would find in a traditional apple pie, so you won’t be missing any of those beloved flavors.

No Bake Apple Pie Bites | Easy to make no bake apple pie bites are the perfect fall dessert!Instead of using a pie crust that would need to bake, I put the apple filling in mini phyllo cups. I love how crisp and flakey the phyllo cups are and they are just the right size for a mini dessert. Once the cups are filled top them off with some whipped cream, because who doesn’t like a little whipped cream on top of their pie!

The No Bake Apple Pie Bites are great because the filling can be made ahead of time and refrigerated until you are ready to use it. Just reheat it on the stove or the microwave just before you are ready to serve them. The bites taste good slightly warm or even at room temperature. These mini treats only take minutes to assemble and are the perfect dessert for your next baby shower, party, or fall brunch!

Ingredients 

Apple Pie Filling

  • 4 apples, peeled, cored, and diced
  • 3 tablespoons brown sugar, use 4 tablespoons depending on how sweet you like your filling
  • half of a lemon, juiced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt, nutmeg, and allspice
  • 1/2 cup water
  • 2 tablespoons cornstarch

Other Ingredients

  • 15 mini phyllo shells
  • Whipped cream

Instructions 

  • In a medium sized saucepan over medium-high heat combine the diced apples, 1/2 cup of water, sugar, cinnamon, salt, nutmeg, allspice, lemon juice, and vanilla extract.
  • Stir everything together and let the mixture cook with the lid on for about 8-10 minutes or until the apples have softened.
  • Stir the mixture every few minutes and lower the heat if the apples start to stick to the bottom.
  • In a small bowl whisk together the cornstarch and 2 tablespoons of water until the cornstarch has dissolved.
  • Pour the cornstarch mixture over the apples then stir everything together.
  • Continue cooking and stirring the filling for another 2 minutes or until it has thickened.

Assembling the No Bake Apple Pie Bites

  • Let the apple pie filling cool slightly before spooning it into the phyllo shells.
  • Fill the phyllo shells with the filling then top them with the whipped cream and a sprinkle of cinnamon if desired.
  • Serve immediately to prevent the phyllo shells from becoming soft.

Notes

The apple pie filling may be made ahead of time and refrigerated. Reheat the filling in the microwave or on the stove.
Don't freeze the filling as the cornstarch causes the consistency to change when frozen.
To prevent the whipped cream from melting make sure the filling is just slightly warm or room temperature.
The bites are best when they are assembled right before serving to prevent the phyllo shells from becoming soft.

    Thanks for the inspiration Danae! My daughter was home from U of A and instead of going out for Restaurant Week, we did our own version at home. We made the No Bake Apple Pie bites for our dessert course but modified the recipe a bit and put in blueberries instead (we were having apples with our pork entree). They were delicious! Love those mini phyllo shells – I’d never tried them before. Hope all is going well for you!
