Pumpkin Pie Yogurt and Granola Parfaits

Make your own easy pumpkin pie flavored Greek yogurt then layer it in a glass or jar with crunchy granola for a delicious and healthy parfait!
So I know I said I was going to back off on the pumpkin recipes this month and here I am 4 days into November sharing another pumpkin recipe. But I promise, this is the last one for a while! I clearly have pumpkin addiction this time of year like so many other people, but it’s hard not to when October and November seem to be the only acceptable time to be eating and making all things pumpkin. Just when I think I’ve made and eaten all the pumpkin I can, I find myself slipping it into yet another recipe. This time I made Pumpkin Pie Yogurt and Granola Parfaits.
I eat yogurt on a daily basis, although lately I’ve been a little bored with it. What better way to add some excitement to my boring cup of yogurt then to turn it into a crunchy delicious parfait!
I’m really picky when it comes to yogurt. I almost always eat Greek yogurt because I like it’s thickness and how much protein it contains. I’m not big on eating flavored yogurt with the exception of vanilla because I find them to be too sweet. Generally I stick to plain yogurt and add in my own sweeteners, granola, nuts, fruit, etc. Since it’s fall, what better flavor than pumpkin pie, plus it’s a great way to use up any pumpkin puree you may have sitting in the fridge.
The parfaits are super simple to whip up and perfect for breakfast or a snack. I like to make the pumpkin pie flavored yogurt in a big batch then I can just scoop some out whenever my pumpkin or yogurt craving hits me. To make the pumpkin pie yogurt simply whisk together vanilla Greek yogurt, pumpkin puree, ground cinnamon, ginger, and cloves. Since the vanilla yogurt is already sweetened I didn’t add any additional sweetener. For the granola you have two choices. Use your favorite store bought brand or make a batch of my Pumpkin Pie Granola. I vote that you make the homemade version, it so much more delicious than what you get at the store, plus your house will smell amazing! Layer the yogurt and granola as many times as you want and be sure to serve it in a pretty jar or glass so you feel extra fancy eating it!
Pumpkin Pie Yogurt and Granola Parfaits
Ingredients
- 2 5.3 ounce containers vanilla Greek yogurt
- 1/4 cup pumpkin puree
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- Pinch of ground cloves
- 1/2 cup granola
- 2 tablespoons pepitas pumpkin seeds
Instructions
- In a medium sized bowl add the yogurt, pumpkin puree and spices and whisk together until smooth.
- Equally divide and layer the yogurt, granola and pepitas into two glasses or jars.
