Santa Fe Veggie Burgers with Sweet Potato Fries, Caramelized Onions and Chipotle Ketchup

Do you ever find yourself really craving a burger, but then you realize it’s Monday and you do meatless Monday? What a bummer right? Wrong! Today I’m here to fix that burger craving and keep it completely meatless thanks to these tasty Santa Fe Veggie Burgers with Sweet Potato Fries, Caramelized Onions and Chipotle Ketchup!
Store bought veggie burgers tend to get a bad reputation and I have definitely had some flavorless cardboard ones. I hate how so many of them have zero texture, no flavor and by no means fill me up. They taste nothing like what you want a burger hot of the grill to taste like. My opinions on store bought veggie burgers have recently changed. The kind people over at Sweet Earth Natural Foods sent me some of their veggie burgers. The burgers come in 3 delicious flavors, Teriyaki, Santa Fe and Za’Atar. They are all vegan, certified Non-GMO, high in protein, fiber and have zero cholesterol. Being partial to Southwest flavors I knew I wanted to use the Santa Fe burger to create an epic stack for you.
A couple things I really like about the Sweet Earth burgers are that they are full of texture and spices. The texture and nutrition comes from the gourmet grains and real vegetables that they use in them. Everything isn’t pulverized into a paste, you can actually see the grains and veggies. The Santa Fe veggie burger has a nice smokey flavor thanks to the chipotle peppers, ancho chile powder, smoked paprika and even a little hickory smoke to give it that grilled taste.
As you know in order to take any burger from good to great you need to have the right toppings on it and I couldn’t be more thrilled with the combination of flavors happening on this one! The Santa Fe veggie burger is first topped with a slice of pepper jack cheese because cheese on a burger is how I roll. Next the caramelized onions. Raw onions I don’t do, but caramelized, you betcha! On top of that are the baked, spiralized, sweet potato fries. You were gonna have fries with your burger anyways so you might as well just use them as a topping. Finally the chipotle ketchup. Smokey, sweet and pairing perfectly with the smokey flavors of the Santa Fe veggie burger. These Santa Fe Veggie Burgers with Sweet Potato Fries, Caramelized Onions and Chipotle Ketchup are NOT your average veggie burger and definitely not to be missed!
Santa Fe Veggie Burgers with Sweet Potato Fries, Caramelized Onions and Chipotle Ketchup
Ingredients
Baked Sweet Potato Fries
- 2 large sweet potatoes spiralized
- 1 tablespoon olive oil
- 3/4 teaspoon chili powder
- Kosher salt and black pepper to taste
Caramelized Onions
- 1 large yellow onion thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon granulated sugar
- Kosher salt and black pepper to taste
Chipotle Ketchup
- 1/4 cup ketchup
- 1 chipotle pepper in adobo sauce minced
Other Ingredients
- 4 Sweet Earth Natural Foods Santa Fe Veggie Burgers
- 4 buns toasted
- 4 slices pepper jack cheese
- Lettuce
Instructions
Baked Sweet Potato Fries
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a large bowl toss the spiralized sweet potatoes with the olive oil, chili powder, salt and pepper until completely coated.
- Pour the sweet potatoes out onto the prepared baking sheet and spread out into a single layer.
- Bake for 20 minutes gently tossing halfway through to ensure even cooking.
- Check the sweet potatoes after 15 minutes as they may brown faster depending on the their size and your oven.
Caramelized Onions
- While the sweet potato fries are baking heat a large skillet over medium heat.
- Add in the tablespoon of olive oil and swirl it around the bottom of the skillet.
- Add in the onion, sugar, salt and pepper tossing together to coat everything.
- Let the onions sauté over medium heat for about 7-8 minutes then reduce the heat to medium low.
- Let the onions cook for another 10 minutes or until they are brown and caramelized, stir occasionally.
Chipotle Ketchup
- In a small bowl whisk together the ketchup and chipotle pepper in adobo sauce until combined.
Assembling the Burgers
- Heat the Sweet Earth Santa Fe Veggie Burgers according to box instructions.
- Toast the buns if desired and lay a piece of lettuce on the bottom of the bun.
- Place the burgers onto the lettuce and top with a slice of pepper jack cheese and equal amounts of the caramelized onions and sweet potato fries.
- Spread some of the chipotle ketchup on the top half of the bun.
- Serve immediately.

This is my kind of burger! I love the combination of the sweet potato, caramelized onions and chipotle mayo. I haven’t tried the sweet earth burgers yet but I tried their breakfast sandwiches and love the flavor. I need to try these burgers soon!
