It’s been so hot here the past few days! I know, I know, an Arizona native should NOT be complaining about being hot, but I am you guys! I’ve had to start working downstairs because I would start sweating at my desk upstairs. Is it just me or is it totally gross sitting in a leather chair, sweating away, and then you try to stand up and your skin is almost ripped from you body because it’s stuck to the chair?! Ok maybe that was too much to share, but I needed to get that off my chest. I’m justifying my complaints about the heat by telling myself I’m a lot closer to the sun here in Colorado than I was in Arizona thanks to the elevation. Whatever, I’m probably being a wimp. You know what I REALLY hate doing when it’s hot, turning on the oven. So, what’s a girl to do when she wants dessert, but has already eaten all the Greek Yogurt Fudgesicles and Coconut Pineapple Yogurt Pops? You guessed it, make Skinny Chocolate Cheesecake Dip!

I seriously have a cheesecake problem. I feel like I’m sharing too many cheesecake desserts and should probably make something different, right? I can’t help myself though. It’s so cold and creamy and sweet and delicious and in this case slightly healthier, if you can use that word when describing cheesecake.

I LOVE LOVE LOVE real cheesecake, you know the one loaded with full fat cream cheese, tons of sugar, a thick buttery graham cracker crust, and pretty much any kind of decadent mix in, oooh and don’t forget to top it with whipped cream! However, if I ate that sinful version as much as I would like my hips and gut would not forgive me. So in order to satisfy this cheesecake craving in the most simple way possible I’ve come up with this Skinny Chocolate Cheesecake Dip.

This dip will not only make you happy, but anyone you share it with as well. I can definitely see myself serving this up for a crowd with some fresh strawberries and graham crackers. One dunking into this dip and you will find it hard to stop. The good news is it’s lighter! I made this dip using a combination of light cream cheese, non fat vanilla Greek yogurt, unsweetened cocoa powder, vanilla extract, and a little powdered sugar for sweetness. All you have to do is combine all of the ingredients in a bowl of a stand mixer with the whisk attachment, or use a hand held mixer, beat it until it’s smooth and creamy, refrigerate, then serve. Simple right?!

The dip is creamy with just the right amount of chocolate flavor and the cream cheese gives it that slight cheesy tangy flavor that cheesecake has. If you wanted to you could also stir in some mini chocolate chips to this fabulous dip, wish I would have thought of that earlier while I still had some! Oh well it gives me an excuse to make it again!
