I don’t know about you guys, but I love a good burger and these BBQ Turkey Burgers with Chipotle Slaw are one of my favorites!
Growing up every Saturday night was hamburger night. Did you have any days of the week that were consistently dedicated to the same meal? I’m not sure how it happens, but I think it’s pretty common. My husband always had spaghetti on Monday nights growing up and now I’m pretty sure he can’t stand it unless there is a big piece of Italian sausage mixed in and a chunk of garlic bread on the side. My dad doesn’t like macaroni and cheese much because he ate it every week growing up. I know, I know, how could someone not like macaroni and cheese?! But I suppose when you eat the same thing once a week for years on end you are bound to get sick of it. Like I said for me it was hamburgers EVERY Saturday night. I can’t say that I ever got really sick of them, but I definitely don’t carry on the Saturday night tradition now that I’m an adult. Don’t get me wrong I love a good burger, but I just don’t crave them weekly much to my husband’s disappointment. When I do make burgers I love to get creative with the flavors rather than stick with just a plain beef burger. Earlier this month I shared my recipe for Buffalo Turkey Burgers which are a favorite around here. However, when we are in the mood for BBQ sauce, on and in our burgers, I make these BBQ Turkey Burgers with Chipotle Slaw.
I love the sweet tang and the smokey spice that the BBQ sauce and chipotle chile powder give these burgers. If you’ve never tried coleslaw on top of a burger you really need to. There is something about that creamy coleslaw piled high on top of the burger that puts a measly piece of lettuce to shame. The idea for these burgers come from Cooking Light, with a few slight changes to suit our tastes. For the burgers you start with lean ground turkey and then pack them full of flavor by adding your favorite BBQ sauce, chipotle chile powder, and garlic. Since we are using lean ground turkey, I added an egg and 1/4 cup of panko breadcrumb to keep the burgers moist. Now for that crunchy, creamy slaw on top of the burger. I used a couple cups of pre-packaged coleslaw mix, a combination of light mayonnaise and plain Greek yogurt, more chipotle chile powder, cider vinegar, a little bit of honey for sweetness, salt, and pepper. When you add the dressing to the slaw you might be thinking to yourself that it doesn’t look like enough. Trust me though, stick it in the fridge for 30 minutes and the dressing will bring out the moisture of the cabbage and you will be left with plenty of dressing.
Along with topping the burgers with the chipotle slaw we also melted a slice of cheddar cheese on them and added a little more BBQ sauce, I seriously can’t get enough of the stuff! I gave the buns a quick toast so that they wouldn’t get soggy from the slaw, plus I like that toastiness on a burger. Then we unhinged our jaws and took a bite…so so good! The first bite of a burger is always my favorite. You get the juiciness and BBQ flavor coming from the burger, the sharpness of the cheese, and then the creamy, slightly spicy crunch from the slaw, it’s mouthwatering!
