So I can tell you right now that this Green Blueberry Banana Smoothie won’t be winning any awards based on it’s color.

I promise however, that what it is totally lacking in vibrant color it makes up for in taste. It’s said that we eat with our eyes first and I am a firm believer of that, but sometimes we just have to put looks aside, be brave, and take a bite, or in this case a sip. There are times when our eyes don’t deceive us and the food or drink is just as awful as we imagined it would be, but then there are those moments when even the most unappealing looking foods surprise us and we find ourselves gobbling them up or in this case sucking them up through a straw in a matter of minutes.

The reason this Green Blueberry Banana Smoothie is a lovely shade of grayish, greenish, blueish, is not because I made it from dirt. No friends, lets go back to the days of elementary school when we learned about the color wheel. When you mix two primary colors you get a secondary color, when you mix a primary and secondary color you get a tertiary color. Sadly, when you mix green, AKA the spinach and flax meal into a beautiful fruit smoothie it kind of kills that beautiful blue/violet color that the blueberries create and turns it into a grayish muddy hue. It’s funny how the color of spinach can completely dominate the color of a fruit smoothie and usually not in a good looking way. Remember though, looks can sometimes be deceiving. So enough about the not so beautiful color of this smoothie, lets move on to how delicious it tastes and how good it is for you.

This smoothie is packed with antioxidants thanks to all the blueberries and spinach. It’s loaded with potassium from the banana, protein from the Greek yogurt, calcium from the milk, and fiber and omega 3 fatty acids from the flax meal. The sweetness from the smoothie is a combination of the natural sugars from the banana, a little maple syrup, and vanilla extract. All of these powerhouse ingredients blend together into a tasty and filling breakfast or afternoon snack. So, just for a minute lets put looks aside, toughen up and blend up this deceivingly delicious and healthy Green Blueberry Banana Smoothie, your body and tastebuds will thank you!

Green Blueberry Banana Smoothie

Despite it's color, this Green Blueberry Banana Smoothie is delicious, sweet, and packed with healthy ingredients. Perfect for a quick breakfast or afternoon snack!

Ingredients 

  • 1 cup skim milk or milk of choice
  • 1/3 cup plain non fat Greek yogurt
  • 1 frozen banana
  • 3/4 cup frozen blueberries
  • 1 cup baby spinach
  • 1 T. flaxseed meal
  • 4 t. maple syrup or honey
  • 1/2 t. vanilla extract
  • 1 T. unsweetened shredded coconut optional

Instructions 

  • Place all of the ingredients in the blender and blend until smooth.
  • Pour the smoothie into one large or two smaller glasses.
  • Serve immediately.
