This banana bread baked oatmeal is made with rolled oats, mashed bananas, cinnamon and nutmeg, and sweetened with maple syrup. It tastes just like banana bread in oatmeal form and is great for meal prepping!

The ingredients

  • Bananas – Use large, ripe bananas. The riper they are the sweeter and more intense the banana flavor will be.
  • Egg – Binds the baked oatmeal together.
  • Milk – Dairy or non-dairy milk can be used. I often use unsweetened almond milk.
  • Maple syrup – The sweetener for the baked oatmeal.
  • Vanilla extract
  • Rolled oats – Also called old fashioned oats. Don’t substitute with quick oats or steel cut oats for this recipe.
  • Cinnamon and nutmeg – Warm spices typically used in banana bread.
  • Baking powder – Helps the baked oatmeal to rise.
  • Salt – Balances out the sweetness.

How to make banana bread baked oatmeal

Mash the banana in a large mixing bowl. Add in the egg, milk, maple syrup, and vanilla and whisk everything together until combined.

Add the oats, cinnamon, nutmeg, salt, and baking powder in with the wet ingredients. Stir everything together until combined.

Pour the mixture into an 8×8 or similar size baking dish sprayed with cooking oil. Bake at 350° F. for 40-50 minutes or until the oatmeal is set and golden brown around the edges. Let the oatmeal cool for at least 10 minutes before cutting into it.

How to serve banana bread baked oatmeal

Baked oatmeal can be eaten warm or cold. Serve it as is or top it with your favorite nut butter, a drizzle of maple syrup, sliced bananas, chopped nuts, Greek yogurt, or milk.

Variations

  • Add 1/4-1/3 cup chopped pecans or walnuts into the baked oatmeal.
  • Use honey instead of maple syrup as the sweetener.
  • Make it vegan and substitute the egg with a flax egg.

Baked oatmeal FAQs

Can quick oats be used for baked oatmeal?

No. For this recipe they won’t work. There are baked oatmeal recipes out there that call for quick oats, but the ingredients and cooking time will be different.

Can baked oatmeal be made ahead of time?

Yes. Make the oatmeal and bake it the night before you plan to serve it. Refrigerate it overnight and then reheat it in the oven the next morning. Cover with foil and bake it in a 350° F. oven for 10-15 minutes or until warm.

Can baked oatmeal be made without an egg?

Yes. To make baked oatmeal egg-free or vegan use flaxseed meal or chia seeds. Combine 1 tablespoon with 2.5 tablespoons of water and let it sit for 5 minutes before adding it to the mixture.

How long will banana bread baked oatmeal keep?

How do you reheat baked oatmeal?

Baked oatmeal can be reheated in the microwave or if you’re reheating the entire dish, I suggest reheating it in the oven. Cover with foil and bake at 350° F. for 10-15 minutes or until it’s warmed through.

Ingredients 

  • 2 large bananas mashed
  • 1 egg
  • 1 1/2 cups milk I used unsweetened vanilla almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 1/4 cups rolled oats
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions 

  • Add the bananas to a large mixing bowl and mash them. Add in the egg, milk, maple syrup, and vanilla and whisk everything together until combined.
  • Add the oats, cinnamon, nutmeg, salt, and baking powder to the mixing bowl and stir everything together until combined.
  • Pour the oat mixture into an 8×8 or similar size baking dish sprayed with cooking oil. Top with sliced bananas if desired. 
  • Bake at 350° F. for 40-50 minutes or until the oatmeal is set and golden brown around the edges. Let it cool for at least 10 minutes before cutting into it. Serve with maple syrup, nut butter, and extra sliced bananas if desired.

    perfect to have in the morning! I’d say baby led weaning safe too! my kids LOVE THIS. I pop it in the microwave for 30 seconds mash it up with some peanutbutter and add some fruit. the whole family enjoys this oatmeal bake!
    I like to add some chia seeds and Hemp seeds too (I just eye all the ammount)

    I made this recipe today, divided into 9 serving, I also omitted the maple syrup and added blueberries with the bananas. I also added added a scoop of protein powder. Was very tasty, will go along with yogurt and my homemade blueberry sauce ๐Ÿ˜‹๐Ÿ’ž ๐Ÿ‘ Thank you for sharing this yummy recipe.
