This roasted lemon parmesan asparagus is a quick and easy side dish that can be ready to eat in 20 minutes! Made with 5 simple ingredients, but packed with delicious flavors!

Quick and easy – This asparagus recipe only requires about 5 minutes of prep and another 8-12 minutes of cooking depending on if you use thick or thin stalks of asparagus.

The ingredients
- Asparagus – You’ll need one bunch, approximately one pound.
- Olive oil – Gives it great flavor and helps it get crisp and browned in the oven.
- Italian seasoning – An herb blend made of oregano, basil, marjoram, rosemary, and thyme.
- Parmesan cheese – Buy a wedge of parmigiano reggiano and grate it yourself for the best flavor!
- Lemon – Remember to zest the lemon before you cut it in half.
How to make lemon parmesan asparagus

Preheat your oven to 425° F. To save time on clean up you can line a rimmed baking sheet with foil or parchment paper.
Break the woody ends off of the asparagus. They should snap off naturally where the tough, fibrous, woody part starts. Place the asparagus onto the baking sheet.
Drizzle on the olive oil and sprinkle on the Italian seasoning, salt, and pepper. Use your hands to toss the asparagus around until it’s coated in the oil and seasoning. Spread it out into a single layer and place it in the oven.
Bake for 7-11 minutes depending on if you are using thin or thick stalks of asparagus. Remove from the oven and top with parmesan cheese. Bake for another minute then squeeze lemon juice all over them and sprinkle on the lemon zest.
How to Pick and Store Asparagus
- Look for stalks of asparagus that are firm. Limp and flimsy stalks are a sign that they’re old.
- They tips should be bright green with tinges of violet. They should also be tightly closed.
- Avoid asparagus with stalks that look dry and woody.
- Store asparagus in the refrigerator, not on the countertop.
- If you won’t be using the asparagus for several days, cut about an inch off of the stalk and store them upright in a jar or cup with about an inch of water. Cover the top of the asparagus with a plastic bag and refrigerate. Change the water when it becomes cloudy.

Storage and reheating
Roasted asparagus will keep in an airtight container in the refrigerator for up to 3 days. To reheat the asparagus, microwave it or warm it in a 400° F. oven.
I don’t recommend freezing roasted asparagus. It will be mushy after defrosting.

Lemon Parmesan Asparagus
Ingredients
- 1 pound asparagus
- 1 1/2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 3 tablespoons grated parmesan cheese
- 1 teaspoon lemon zest
- Juice of 1/2 of a lemon
Instructions
- Preheat oven to 400° F. Rinse the asparagus and break off the ends where ever they naturally snap off.
- Place the asparagus on a baking sheet and drizzle on the olive oil. Season with Italian seasoning, salt, and pepper. Use your hands to toss until they're coated. Spread into a single layer and place in the oven.
- Roast for 7-10 minutes depending on if you're using thin or thick stalks of asparagus.
- Remove from the oven and sprinkle on the parmesan cheese. Return to the oven for another minute or until the cheese is melted. Remove from the oven and squeeze lemon juice all over the asparagus and sprinkle on the lemon zest.
