Raspberry Sorbet Bellinis

These three ingredient sweet raspberry sorbet bellinis are perfect for a spring or summer brunch or dessert cocktail!
Happy Mother’s Day to all the moms out there including my own! I hope you are all being spoiled with good food, flowers, gifts, and most importantly a relaxing day off. Today I’m keeping things short and sweet because you should be pampering mom or if you are mom relaxing with you feet up. Today I’m sharing a recipe, if you can even call it that for Raspberry Sorbet Bellinis!
These Bellinis are so simple to make that it can hardly be called a recipe. Just three ingredients and you are on your way to having a fabulous brunch or dessert cocktail.
The three ingredients in this fabulous Bellini are Pink Moscato, raspberry sorbet, and fresh raspberries. The Pink Moscato can easily be swapped out for Prosecco or Champagne, I just happened to like the color and sweeter flavor that the Moscato had and it paired perfectly with the sweet raspberry sorbet.
To make the Bellinis, add a couple small scoops of raspberry sorbet to Champagne flutes. Next, top the sorbet with the Pink Moscato, Prosecco, or Champagne. Careful when your pouring they bubble up fast!
For a final flourish add two or three fresh raspberries to each Bellini. There you have it, a perfectly pink and pretty drink to serve at your next brunch or dinner party! Hey, you might even have time to throw it together for mom today! Happy Mother’s Day!

Raspberry Sorbet Bellinis
Ingredients
- 1 bottle Champagne or Prosecco chilled
- 1 pint raspberry sorbet
- 1/2 pint fresh raspberries
Instructions
- Place 1-2 small scoops of raspberry sorbet in the bottom of each Champagne flute.
- Carefully pour the champagne over the top of the sorbet. Top each drink off with 2-3 fresh raspberries and serve.
