Is the weather heating up where you live? We’re supposed to get our first 90 degree temperatures of the season on Friday and through the weekend. I know it’s only 90 and this Arizona raised girl shouldn’t complain, but that’s a little too hot for me now. Luckily, we are escaping to the mountains on Saturday for the weekend and the weather should be much nicer up there. Friday I plan to finish up the last of this Strawberry Champagne Sorbet that’s in the freezer because it’s super refreshing and what better way to get in weekend getaway mode than with boozy sorbet!
It’s been way too long since my husband and I went anywhere together for the weekend and we are beyond excited for a few relaxing days in the mountains. We’re headed to Beaver Creek which is about two hours from our house. It will be our first visit there and I’m so excited to do some hiking, trail running, lounging by the pool and of course eating.
We’ll be staying at The Ritz-Carlton Bachelor’s Gulch. After hearing great things about it from family we couldn’t resist checking it out for ourselves. It’s a bit of a splurge, but since we don’t have to buy plane tickets and it’s been so long since we’ve gone anywhere, we decided it was totally worth it. I’m sure you are familiar with the classic pairing of strawberries and champagne. Usually it’s associated with Valentine’s Day. However, I thought it would make a wonderfully refreshing and fun, frozen summer treat!
All you need to make it is fresh strawberries, a bottle of champagne or prosecco and a little bit of sugar to sweeten it up. Both the strawberry and champagne flavors come through nicely and since there’s alcohol in it, the sorbet won’t freeze rock solid. This is an adult only dessert as the alcohol is not cooked out of the mixture, but hey, we need a recipe like that every once in a while! Cheers!
Strawberry Champagne Sorbet
Ingredients
- 4 cups fresh strawberries washed and hulled
- 1 1/2 cups champagne or prosecco
- 1/3 cup granulated sugar
Instructions
- Add all of the ingredients to a blender and blend until smooth.
- Transfer the mixture to an ice cream maker and churn according to the manufacturers instructions.
- Eat immediately or transfer to a freezer-proof container to chill until firm.
